Amazing Greek Pasta Sauce

a red sauce to serve over pasta, fish or chicken
- 1 small yellow onion, diced
- 1 tablespoon olive oil
- 5 cloves garlic, minced
- 1 (16 ounce) can organic Italian diced tomatoes
- 1 (6.5 ounce) can tomato sauce
- 1 tablespoon capers, chopped
- 15 kalamata olives, pitted and sliced
- 2 tablespoons balsamic vinegar
- salt and pepper to taste
- crushed red pepper to taste (optional)
- crumbled Feta or grated Parmesan Cheese
Chipotle Ranch Dipping Sauce

Directions Place all ingredients in a small bowl, and stir to combine
- 1 T. ranch dressing
- 3 T. sour cream
- 1/4 t. chipotle chili powder
- 1/8 t. cayenne (adjust more or less depending on how spicy you want).
- 1/8 t. salt
- 1/8 t. garlic powder
Thai Red Curry with Chicken & Vegetables

Heat the oil in a 3-quart saucepan over medium-high heat until shimmering hot
- 1 Tbs. vegetable oil
- 3 Tbs. red Thai curry paste
- 2 cups snap peas, trimmed and cut in half on the diagonal
- 2 large shallots, thinly sliced (about 1 cup)
- 1 medium red bell pepper, thinly sliced into 2-inch-long strips
- One 13.5- to 14-oz. can coconut milk
- 6 wild lime leaves (magrut or kaffir lime;optional)
- 1 Tbs. light brown sugar
- 1 lb. boneless, skinless chicken thighs (about 5), cut into 1- to 1-1/2-inch pieces
- 1 cup loosely packed Thai basil (or regular basil, torn into small pieces)
- 2 Tbs. fish sauce, more to taste
- 1 Tbs. plus 1 tsp. fresh lime juice
- Kosher salt
Creamy Make Ahead Mashed Potatoes Recipe

Place potatoes in a Dutch oven and cover with water
- 3 pounds potatoes (about 9 medium), peeled and cubed
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup butter, cubed
- 1/4 cup 2% milk
- 1-1/2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 6 bacon strips, chopped
- 1 cup (4 ounces) shredded cheddar cheese
- 3 green onions, chopped

1. Trim fat from meat
- 1 1/2 pounds boneless pork shoulder
- 1 tablespoon cooking oil
- 1/2 cup chopped onion (1 medium)
- 1/2 cup chopped yellow or red sweet pepper (1 medium)
- 1 - 2 canned chipotle chile pepper in adobo sauce, finely chopped*
- 1 10 ounce can diced tomatoes and green chiles, undrained
- 2 15 - 16 ounce can red kidney, black, and/or pinto beans, rinsed and drained
- 1 cup beer or water
- 1/2 cup water
- 1/4 cup bottled salsa
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 4 cloves garlic, minced
- 1/4 cup light dairy sour cream (optional)
- Fresh cilantro sprigs (optional)
Pork Chops with Tangy Red Currant Sauce

- 1 medium onion, chopped
- 6 pork rib chops (with bone), cut 1/2 inch thick (about 2-1/2 pounds)
- 2 teaspoons dried Italian seasoning, crushed
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 14 1/2 ounce can no-salt-added diced tomatoes, undrained
- 2 tablespoons balsamic vinegar
- 2 medium zucchini, halved lengthwise and cut crosswise into 1-inch pieces
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 4 ounces dried orzo, cooked according to package directions

- 2 cups packaged shredded cabbage with carrot (coleslaw mix)
- 2 tablespoons bottled reduced-calorie clear Italian salad dressing or white wine vinaigrette salad dressing
- 2 tablespoons bottled reduced-calorie Thousand Island salad dressing
- 8 1/2 inch thick slices rye bread
- 8 ounces sliced, cooked turkey breast
- 4 slices provolone cheese (4 ounces)
- 1 medium tomato, sliced
