Bacon Cheddar Ranch Chicken Salad

Combine all ingredients in a medium mixing bowl
- 4 c. chopped cooked chicken
- 1/2 c. ranch dressing
- 1/4 c. mayo
- 1/2 c. shredded cheddar cheese
- 1/4 c. chopped cooked bacon
- 2 Tbsp. fresh chives

Classic Green Bean Casserole

- 2 slices of bacon, optional
- 1/4 cup of finely minced onion, optional
- 1 (10.75 ounce) can of condensed cream of mushroom soup
- 1/2 cup of whole milk
- 1 teaspoon low sodium soy sauce
- 1/4 teaspoon of freshly ground black pepper, or to taste
- 4 cups of cooked green beans
- 1-1/3 cups (more or less) of French fried onions (like French's), divided

- Icing:
- 2 cups sugar
- 1/3 cup cocoa
- 4 eggs
- 1 cup nuts
- 1 cup shortening
- 1 1/2 cups flour

- 1/3 cup cocoa
- 1 box confectioners sugar

- Icing:
- 1 stick butter
- 1/2 cup shortening
- 2 cups sugar
- 5 egg yolks
- 2 cups flour
- 1 teaspoon baking soda
- 1 cup buttermilk
- 5 egg whites, beaten
- 1 cup nuts
- 1 cup coconut
- 1 1/2 teaspoons vanilla
- 8 oz. cream cheese
- 1 box confectioners sugar
- 1/2 stick butter, softened
- 1 teaspoon vanilla
Chicken Fried Steak with Southern Style Peppered Milk Gravy

Preheat oven to the lowest setting to hold cooked steaks
- 6 cube steaks (about 3 pounds)
- 1/2 cup vegetable or canola oil, plus 2 tablespoons of bacon fat
- 2 cups self-rising flour, divided
- 1-1/2 teaspoons seasoning salt (like Lawry's)
- 1/4 teaspoon freshly cracked black pepper
- 1/4 teaspoon garlic powder
- 1/4 to 1/2 teaspoon Creole or Cajun seasoning (like Slap Ya Mama)
- 1 cup buttermilk or whole milk
- 2 large eggs
- 1 tablespoon hot sauce, optional
- 2 tablespoons unsalted butter, along with pan drippings to equal 1/4 cup
- Reserved 1/4 cup seasoned flour
- 1-1/2 to 2 cups whole milk
- Kosher salt and freshly cracked black pepper, to taste
Chicken Peanut Stir-Fry

Fill a large saucepan half full with water; bring to boil
- 4 oz. banh pho (Vietnamese wide rice noodles)
- 1/2 teaspoon finely shredded lime peel
- 3 tablespoons lime juice
- 2 tablespoons peanut butter
- 1 tablespoons fish sauce
- 1 tablespoon water
- 4 cloves garlic, minced
- 2 tablespoons Asian chile bean sauce or 1/2 teaspoon crushed red pepper
- 3 teaspoons canola oil
- 1 pound boneless chicken breast,cut into bite size
- 1 medium red sweet pepper, cut into thin strips
- 3 green onions, thinly sliced
- 2 cups packaged shredded broccoli
- 2 tablespoons unsalted peanuts finely chopped
Banana Split Cake

In 9x13 pan, spread crushed vanilla wafers that have been mixed with 1 stick of melted butter
- 3 cups vanilla wafer (1 box)
- 2 sticks butter
- 2 cups confectioners' sugar
- 2 eggs
- 4 bananas
- 1 large can crushed pineapple, drained
- 1 carton Cool Whip
- Chopped nuts
Five Cup Salad

Fold oranges, pineapple, marshmallows and coconut into sour cream
- 1 cup mandarin oranges, drained
- 1 cup pineapple chunks, drained
- 1 cup minature marshmallows
- 1 cup coconut
- 1 cup sour cream
Quick Cracker Snack

In large zip bag or large container with lid, mix and shake all ingredients for a few minutes
- 2 16 oz pkgs oyster crackers
- 1 tablespoon dill weed
- 1 package Italian salad dressing MIX
- 3/4 cup vegetable oil
