  • 2 Tbsp. flax meal mixed with 3 Tbsp. water in small cup
  • 1/2 cup veg marg
  • 3/4 cup turbinado sugar
  • 1 tsp. vanilla
  • 1-1/4 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dried cherries/cranberries
  • 3/4 cup chocolate chips
  • Frosting:
  • 2-1/2 cups powdered sugar
  • 2 Tbsp. cocoa powder
  • 3 Tbsp. veg marg
  • 2 tsp. pure vanilla
  • 1/4 cup soymilk

  • 1/2 cup earth balance marg, soft & at room temp.
  • 1/2 c + 2 T organic brown sugar.
  • 1 T molasses.

  • 1 1/4 cups pine nuts, toasted
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 teaspoon salt
  • 2 sticks (1 cup) unsalted butter, softened
  • 1/2 cup powdered sugar, plus 1 cup for rolling
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest, plus 2 teaspoons
  • 1 teaspoon vanilla extract

  • Batter: 2 c flour, 1/2 c cocoa powder, 2 tsp baking soda, 1-1/2 c turbinado sugar, 1/4 tsp. salt, 1-3/4 c water, 2 TBS apple cider vinegar, 2 tsp vanilla, 1/4 c oil
  • Mousse Frosting: 349 g silken extra firm tofu, patted dry, 1/4 c agave nectar, 2 tsp vanilla, 1-3/4 c dairy free chocolate chips (I used Ghiradelli semi-sweet)
