southwestern stuffed tomatoes straight from the farm

this was so good and comforting
- 6 firm, juicy farm fresh tomatoes
- 4 garlic cloves
- 1/2 an onion, chopped. i used spring onions. the green tops and the bulb since i have so many on hand.
- 1 bell pepper (i did use one pepper, however i think it was a bell pepper. it had more heat than a regular one and was slender and a reddish orange color. the flavor was a cross between a bell pepper
- 1 lb fresh ground turkey
- 1 can organic kidney beans, drained and rinsed
- generous seasonings of: ground cumin, chili powder, oregano, salt and pepper.
- grated cheddar
spicy beef on hummus with grilled veggies

we ate at a local lebanese restaurant the other day for lunch
- spicy beef:
- 1 lb extra lean organic ground beef
- 1 small yellow onion, diced
- 4 garlic cloves, chopped
- cinnamon- no measurements on the spices here, just added, tasted, added, tasted until it was right for us.
- cumin
- salt
- pepper
- allspice
- teeny pinch of curry powder
- big handful of pine nuts
- 6 tbl unsalted butter
- olive oil
- chopped parsley
- sriracha sauce
- hummus:
- 2 cans organic garbanzo beans, drained
- 1/2 cup organic tahini sauce
- 1 lemon
- 3 garlic cloves
- salt
- olive oil
- assorted veggies to roast
