Butter Bean Salad (Rachael Ray)

This is a great alternative to your typical salads during the summer!
- 2 cans butter beans, rinsed and drained, 15 ounces each
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced
- 1/2 red onion, chopped
- 2 cloves garlic, peeled and minced
- 1 tsp ground cumin
- 2 TBS extra virgin olive oil (EVOO)
- 1 large lemon, juiced
- Coarse (kosher) salt and freshly ground black pepper to taste

Sherried Sweet Potatoes

Great for the holidays!
- 1/2 Cup Cooking Sherry
- 3/4 Cup Dark Corn Syrup
- 3/4 stick of butter (you can use the whole thing if you are channeling your inner Paula Deen)
- 1/2 Cup Dark Brown Sugar
- 1.5 HEAPING tsp cinnamon
- 6-8 medium sweet potatoes (unpeeled)

Pasta Fagiole

This was to be a dish on nights that Catholics didn't eat meat but needed protein
- 2 small cans tomato paste
- 2 cans (from paste can) water
- 1 C Olive oil
- 1.5 TBS Oregano
- 1 TBS Basil
- 6-8 LG cloves of garlic
- Hot Pepper Flakes (to taste)
- Salt (to taste)
- 2 cans white kidney beans (with juice)
- 1-2 pounds of sorted pasta (cooked until al dente - SAVE THE PASTA WATER)
Mexicali Pasta Bake

I made this when I was in high school for an "International Foods" day MANY years ago
- 1 TBS corn starch
- 2 Cups milk (2% or higher)
- 1/4 Cup margarine
- 1/4 tsp salt
- 1 pkg (10oz) frozen corn - thawed
- 1 Cup shredded pepper jack cheese
- 1 pkg (3-4oz) cream cheese
- 6 oz Cubed ham
- 6 oz Tri Color Pasta (cooked 6 minutes only, drained)
