Birthday Pasta!

Bring a large pot of water to a boil
- 1/4 pound linguini or another one of the skinny
- pastas, regular or whole wheat
- 1 half boneless, skinless chicken breast (or the
- equivalent amount of salmon, tuna or a can of tuna)
- sliced into thin strips
- 2 Tbsp olive oil
- 1 Meyer lemon, peeled with a paring knife then cut
- into thin slices and quartered, seeds removed
- 3 cloves garlic, minced
- 12 kalamata olives, pitted, and cut in half
- 1 Tbsp capers, rinsed and drained
- Handful flat leaf parsley, chopped
- Salt and freshly ground pepper to taste
Zucchini Patties

Press excess moisture out of grated zucchini between paper towels
- 1 -1/2 Cups Shredded Zucchini
- 2 Tablespoons minced onion
- 1/4 cup grated Parmesan Cheese
- 1/4 cup all purpose flour
- 2 eggs
- 2 tablespoons mayonnaise
- 1/4 tsp oregano
- Salt and pepper to taste
- 1 Tablespoon butter
Crab Cakes

- 16 oz, crab
- 2 T minced parsley
- 2 T minced scallions
- 4 beaten eggs
- 2 T lemon juice
- 2 t dry mustard
- 1 t Worchestershire sauce
- 1/2 t cayenne pepper
- 1/2 t kosher salt
- 1 cup Panko crumbs
Shrimp Dip

My favorite recipe from Sue Martinez
- 2 - 8 oz. packages of cream cheese - softened
- 1/2 C mayonnaise or more as needed
- 1 bunch green onions, chopped
- Juice of 1/2 lemon at the most
- 1/2 lb. to 1 lb. salad shrimp. Take the time to remove
- any shells.
- Tabasco to taste (I am very generous with this)
- Worcestershire Sauce to taste - about 1 Tbs.

- 2 tablespoons butter, melted and cooled
- 1/4 cup fresh lemon juice
- 2 teaspoons fresh lemon zest
- 1/2 teaspoon salt
