Bourbon Banana Walnut Bread

Overripe bananas? Try this
- 1 1/3 cups all-purpose flour
- 3/4 teaspoon fine grain salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 5 1/3 tablespoons unsalted butter
- 2/3 cup sugar
- 2 large eggs, lightly beaten
- 2 very ripe bananas, mashed
- 1/2 cup coarsely chopped walnuts
- 1 tablespoon bourbon
Joe's Crab Shack Crab Cakes

Mix all ingredients together and form into approx
- 2/3 cup mayonnaise
- 5 egg yolks
- 2 teaspoons lemon juice
- 2 tablespoons Worcestershire sauce
- 2 teaspoons Dijon mustard
- 2 teaspoons black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon cajun seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/2 cup crushed, chopped parsley
- 2 1/2 cups breadcrumbs
- 2 lbs crabmeat
- oil for frying
Homemade Chai Concentrate

To serve, mix 1 part concentrate with 1 part milk of your choice
- 4 1/2 cups water
- 8 bags black tea – I used orange pekoe
- 2 cinnamon sticks
- 1 vanilla bean, split in half (or 1 tablespoon of vanilla extract added at the very end)
- 1/2 cup coconut sugar, date sugar or raw cane sugar (you can add more or less depending on how sweet you like your chai)
- 1 – 3-inch section of fresh ginger, cut into pieces
- 10 whole cloves
- 8 cardamom pods
- 1/2 teaspoon freshly ground nutmeg
- 2 whole star anise pods
- 1/2 teaspoon of whole black peppercorns
- 1 teaspoon orange zest
- 1 tablespoon raw honey (optional, leave off to make vegan, if you want it to be sweeter without the honey, add a bit more sugar in at the beginning)
Italian Meatball Soup

This recipe is a Paleo modification of "Cinnamon Spice & Everything Nice's" version of Italian Meatball Soup
- Meatballs:
- 1 + 1/4 pounds ground beef (I like 85/15)
- 1 egg, beaten
- 2 cloves garlic, minced
- 1 teaspoon finely chopped parsley
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon sea or kosher salt
- 1/8 teaspoon fresh black pepper
- Soup:
- olive oil, for sauteing
- 1 large onion, diced
- 2 medium-ish carrots, diced
- 1 stalk celery, diced
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- coarse salt and fresh black pepper
- 5 cups chicken broth
- 4 - 5 cups baby kale or baby spinach, stems removed
- 1 tablespoon fresh basil or parsley, chopped
