1. In saucepan, warm butter and cream on medium heat
- 1 cup heavy whipping cream
- 1 stick of butter
- 2 cups grated parmesan cheese
- salt & pepper, optional for personal taste
Eggplant Parmesan

Beat egg in a shallow bowl and set aside
- 1 egg
- 1/2 cup flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup breadcrumbs
- 1 large eggplant
- 1/4 cup oil
- salt and pepper
- 1 cup spaghetti sauce
- 1 1/2 cup mozzarella
Cauliflower Tacos

In a large bowl, mix all slaw ingredients together
- Slaw Mix:
- 1 1/2 Cauliflower, cut into bite size pieces
- Olive Oil
- 1 Recipe of Taco Seasonong (My Cookbook)
- 1/2 Cabbage, sliced thinly
- 1/2 Red Cabbage, sliced thinly
- 12-14 Corn Tortillas
- 1/4 c Mayonnaise
- 6 Tbsp Sour Cream
- 4 1/2 Tbsp Vinegar
- 1 1/2 Tbsp Sugar
- 4 tsp Minced Onions
- 3/4 tsp Celery Salt
- 4 1/2 tsp Mustard Powder
- 3/4 tsp Salt
- 3/8 tsp Black Pepper
- 2-3 Lime, squeezed
- Finishing Touches:
- 2 Large Avocado, sliced
- Cilantro for garnish
- Lime juice
Bean Dip

1. Preheat oven to 350 degrees
- 1 8 oz cream cheese, softened
- 1/4 cup green onions, chopped
- 1/2 pint sour cream (8 oz)
- 1/2 pkg taco seasoning or *homemade seasoning
- 3 cans frito bean dip
- 2 tbsp parsley
- 1 lb. cheddar cheese, grated
- 1 lb. monterey jack cheese, grated
- tortilla chips
- Homemade Seasoning*
- 1/8 tbsp chili powder
- 3/4 tsp cumin
- 1/4 tsp paprika
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/8 tsp oregano
- 1/4 tsp salt
- 1/8 tsp black pepper
Shredded Chicken

-Tender 1. Bring chicken to a boil (with salt) in med-large pot
- 3 lb boneless, skinless chicken thighs
- Very tender chicken (1 hour and 30 min)
- Quick cooked chicken (30 min)
- Salt to season water (optional)
Honey Walnut Shrimp

Prepare Walnuts: Heat 1 inch deep of oil in pan on med/high heat
- Sauce for Shrimp:
- 2 lb Tiger Shrimp 21/25 per pound, peeled and deveined
- 2 Egg
- 6 oz Walnuts
- 4 c Canola Oil
- 8 Tbsp Sugar
- 1/4 c Water
- 2 c Cornstarch
- 1/8 tsp Salt
- 1/8 tsp Pepper
- 1/3 c Mayonnaise
- 1 c Sweetened Condensed Milk
- 4 Tbsp Honey
- 2 tsp Vinegar
- 1/8 tsp Salt
Creamy Asparagus Chicken & Rice

1. Pre-heat oven to 350 degrees
- 2-4 boneless, skinless chicken breasts
Pepper Chicken

1. Heat oil in a large nonstick skillet over med-high heat
- 1 lb boneless, skinless chicken breast, cut into 1-inch pieces
- 2 tbsp vegetable oil
- 1/2 c ketchup
- 3 tbsp light soy sauce
- 1/8 tsp black pepper
- 2 tbsp all-purpose flour
- 1 lrg onion, halved and cut into thin slices
- 2 green bell peppers, seeded, cored and cut into thin slices
- 1 can sliced mushrooms, drained
- Rice for side (optional) 1:2 ration (1 part rice + 2 parts water)
Simple Mexican Rice

1. Add oil to saute pan with white rice
- 1 c white rice
- 1 tbsp oil
- 2 c water or chicken broth
- 1 8oz can tomato sauce
- 1 can corn
- garlic salt (optional)
- salt to taste
