Rosemary Roasted Potatoes

- 1 1/2 lbs. small red or white-skinned potatoes
- 1/8 cup olive oil
- 3/4 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 Tbsp. minced garlic
- 2 Tbsp. minced fresh rosemary leaves

If your apples are especially tart, omit the lemon juice
- BREAD CRUMBS
- 4 large slices white sandwich bread (about 4 ounces), each slice torn into quarters
- 2 tablespoons packed light brown sugar
- 3 tablespoons unsalted butter, cut into 4 pieces
- APPLES
- 1/4 cup light brown sugar (1 3/4 ounces)
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cinnamon
- Pinch table salt
- 3 tablespoons unsalted butter
- 1 1/2 pounds Granny Smith apples (about 3 medium), peeled and cut into 1/2-inch cubes (about 4 cups)
- 1 1/2 pounds Golden Delicious apples (about 3 medium), peeled and cut into 1/2-inch cubes (about 4 cups)
- 1 1/4 cups apple cider
- 1 - 3 teaspoons lemon juice from 1 lemon (see note)

1. Preheat oven to 300°. Combine crushed cookies and butter
- 1 1/2 cups crushed dark chocolate-and-almond shortbread cookies (about 18 cookies; we tested with Keebler Dark Chocolate and Almond Shortbread Sandies)
- 2 tablespoons melted butter
- 2 (4-oz.) semisweet chocolate baking bars, chopped
- 1 cup whipping cream
- 4 (8-oz.) packages cream cheese, softened
- 1 (14-oz.) can sweetened condensed milk
- 2 teaspoons vanilla extract
- 4 large eggs
- Ganache Topping
- 1 cup whipping cream
- 1 (4-oz.) semisweet chocolate baking bar
- 1 (4-oz.) dark chocolate baking bar
- Garnish: fresh raspberries or White Chocolate Snowflake
Goat Cheese Mashed Potatoes

Preheat the oven to 375 degrees F
- 3 lbs. large Yukon gold potatoes, peeled and cut in 3/4 inch chunks
- 5 large garlic cloves
- Kosher salt and fresh ground black pepper
- 7 to 8 ounces garlic & herb goat cheese, at room temperature
- 4 Tbsp. unsalted butter, at room temperature
- 1 1/2 cups sour cream
- 1/2 cup half-and-half or milk
- 1/2 cup freshly grated Parmesan cheese
Swedish Maria Pastries (Mariabakelser)

This is a variation of Swedish Welsh bread
- FILLING:
- 1 recipe Swedish Welsh bread
- 1 recipe choux paste
- 1 cup light cream
- 2 egg yolks
- 1 tablespoon sugar
- 1 tablespoon cornstarch
- 1 teaspoon unflavored gelatin
- 1 cup whipping cream, whipped
- 1/4 cup sugar
- 1 teaspoon vanilla
- FROSTING:
- 1 cup powdered sugar
- 2 tablespoons softened butter
- 2 to 3 tablespons cream
- 1 teaspoon almond extract
Romaine and Potato Salad With Artichoke, Tomato, and Parsley Dressing

Directions Steam the potatoes in ½ inch water until tender, 12 to 15 minutes
- 1 1/2 pounds fingerling potatoes, halved
- 1 beefsteak tomato, chopped
- 1 15.5-ounce can artichoke hearts, drained and quartered
- 1/3 cup chopped roasted almonds
- 1/4 cup chopped fresh flat-leaf parsley
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar

- 4 romaine hearts, halved or quartered if large
Deli-Style Rye Bread

- 1 1/2 teaspoons dry active yeast

- 3 cups unbleached all-purpose flour or bread flour

- 3 1/2 cups rye flour, such as Pillsbury medium rye or King Arthur light rye

Steamed Artichoke Hearts
