Cheese Enchiladas

In a small sauce pan warm chili
- 2 lbs Velvetta Cheese
- 2 Yellow Onions (chopped)
- 1 40 oz can Chili
- 1 pkg Corn Tortillas
- 1 cup Oil for frying
Honey Fruit Salad

Combine fruit in medium bowl
- 1 pint fresh strawberries (washed, stemmed & quartered)
- 1 pint fresh blueberries, picked over and rinsed
- 3 medium bananas, sliced
- 1/3 cup honey
- 3 tblsp (heaping) frozen concentrated limeade (thawed)
- 1 tblsp poppy seed
- mint sprigs, for garnish
Lemon Pudding Cakes

Heat oven to 350°F. In medium bowl, beat cake mix and water with electric mixer on medium speed 2 minutes
- 1 box Betty Crocker® white angel food cake mix
- 1 1/4 cups water
- 1 box (4-serving size) lemon instant pudding and pie filling mix
- 2 cups milk
- 6 oz fresh blueberries (about 1 cup)
- Grated peel of 1 lemon
Soft Taco's

Brown hamburger meat with taco seasoning
- 1 lb hamburger meat
- 1 pkg corn tortillas
- 3 tblsp vegetable oil
- 1 pkg taco seasoning
- 1/2 head Lettuce (shredded)
- 4 lg Tomatoes (diced)
- 1 Onion (peeled & finely chopped)
- 2 cups Cheese (shredded)
- Taco or Picante Sauce
Green Chili Pockets

Cook & drain hamburger meat
- 1 lb hamburger meat or chicken (cooked)
- 2 can crescent rolls
- 2 cans whole green chillies
- 1 bunch green onions (finely chopped)
- 2 cups grated Longhorn cheese
- 1 sml can chopped black olives (for garnish)
- 1 carton sour cream
Bacon, Sausage, Cheese & Egg Muffins

- Preheat oven to 375 degrees
- 1 cup cooked, chopped bacon
- 1 cup cooked crumbled breakfast sausage
- 1/2 cup bread crumbs
- 1 cup grated cheese of choice (we used cheddar)
- 1/2 small yellow onion (diced)
- 8 large eggs
- 2 tablespoons milk
- salt and pepper
Jalapeno Popper Cups

Heat oven to 375°F. Separate each biscuit into 2 rounds
- 1 can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated buttermilk biscuits
- 1 can (4.5 oz) Old El Paso® chopped green chiles, drained
- 1/2 cup shredded Cheddar cheese (2 oz)
- 1/3 cup mayonnaise or salad dressing
- 2 tablespoons cooked real bacon pieces (from 3- to 4.3-oz jar or package)
- 1 teaspoon dried minced onion
- 20 Old El Paso® pickled jalapeño slices (from 12-oz jar), drained
Cupcake Poppers

1 Heat oven to 350°F (for all pans)
- Cupcakes
- 1 box Betty Crocker® SuperMoist® white cake mix
- Water, vegetable oil and egg whites called for on cake mix box
- 1/4 teaspoon each Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)
- Frosting
- 1 1/2 cups marshmallow creme 3/4 cup butter, softened 1 1/4 cups powdered sugar Betty Crocker® gel food colors (neon pink, neon purple, neon orange, neon green, classic blue)
Taco Salad

Combine all ingredients
- 1 lb ground beef, cooked and drained
- 1 can ranch style beans
- 1 head lettuce (shredded)
- 3 med-lg tomatoes (chopped)
- 1 med-lg onion (finely chopped)
- 1 cup shredded cheddar cheese
- 1 bottle Catalina Dressing
- 1 bags Doritos or Fritos
Cornbread Dressing

Have your turkey broth or chicken stock heating over medium heat on the stove
- 4 pkgsCorn bread mix (prepared, cooked & crumbled into bowl)
- 8 slices White bread (dry bread is fine)(cut or crumbled into small pieces)
- 1 stalk Celery (chopped)
- 2 large Onions (chopped)
- 6 large Eggs (hard boiled and chopped)
- 1 can Evaporated Milk
- 5 cups (or more) Turkey broth or Chicken Stock
- Rubbed Sage and salt to taste
