- 2 table spoons olive oil
- 1 onion finely chopped
- 4 cloves garlic, finely chopped

- 150 g melted butter
- 1 tblsp icing sugar

Soft Meringue Roulade

- 3 sheets frozen ready-rolled shortcrust pastry, partially thawed

To make the rempah, blend the rempah ingredients until you achieve a fine paste

- 10 sprigs of curry leaves

- 3 Tbs ground coriander

- 15 dried long red chillies*, deseeded*, soaked in boiling water until soft, drained and chopped
- 20 g belacan
- 25 g fresh turmeric root, peeled and sliced
- 3 cloves garlic, peeled, sliced
- 270 g red eschallots OR Spanish onion, peeled, sliced
- 1/3 cup vegetable oil

Preheat oven to 350ºF and place an oven rack in the center position if you don’t have it there already
- 3 large eggs
- 1 1/2 cups reduced fat milk
- 3/4 teaspoon salt
- 1 pinch nutmeg
- 48 wonton wrappers
- 1 cup fontina cheese (shredded)
- 1/2 cup frozen chopped spinach (thawed and squeezed to remove excess water)
- 1/2 cup artichoke hearts (chopped jarred or canned, drained well)
