Creole Crab and Corn Chowder

- 2 tablespoons butter
- 1/2 cup diced onion
- 1/2 cup chopped jalapeno peppers
- 1/2 cup diced celery
- 1 pinch salt
- 1/2 teaspoon seafood seasoning (such as Old Bay®)
- 1/4 teaspoon cayenne pepper
- 1 1/2 tablespoons all-purpose flour
- 2 1/2 cups water
- 1/2 pound sweet corn kernels
- 2 ounces fresh crabmeat
- 1 cup water
- 1/2 pound sweet corn kernels
- 2 cloves peeled garlic
- 6 ounces fresh crabmeat
- 1/4 cup heavy cream
- 1 teaspoon Spanish paprika (preferably sweet)
- 1 bunch thinly sliced green onion for garnish
- 1 pinch cayenne pepper

- 1/4 cup sliced or slivered almonds or shelled pistachios
- 1 cup packed fresh arugula leaves
- 1/2 cup packed fresh basil leaves
- 1/2 lemon, juiced
- 1 clove garlic, grated or minced
- Salt and freshly ground black pepper
- 1/3 cup extra-virgin olive oil
- 4 small pieces boneless, skinless chicken breast (tenders removed)

Luby's Tartar Sauce

Luby's Tartar sauce is the best I've ever tasted! It's perfect for seafood and or anything else you can think of
- 1 jar (8 ounces) real mayonaise
- 1/2 cup dill relish
- 1/3 cup onion, chopped to almost a mushy consistency in a mini chopper
- 2 cloves garlic, chopped with onion
- Salt & pepper, to taste
- All of these ingredients are approximate and to taste except the mayo.

- 1 red onion, finely diced
- 1 red bell pepper, seeded and diced
- 1 tablespoon minced garlic
- 1 tablespoon ground cumin
- 1 teaspoon crushed red pepper flakes
- 1/4 cup chopped fresh cilantro
- 1/3 cup red wine vinegar
- 2 tablespoons olive oil
- 1/4 cup fresh lime juice
- salt and black pepper to taste

- 1 cup frozen peaches (18 gms CHO)
- 1 cup unflovored greek yogurt (7 gms CHO, 22 gms protein)
- 3/4 cup milk (9 gms CHO, 8 gms protein)
- Or enough to make it blend in your blender
- 1 tsp vanilla extract
- 1 tbsp Splenda Brown sugar (4 gms CHO)

Baked Crab Rangoon

HEAT oven to 350°F. Mix first 4 ingredients
- 1 can (6 oz.) white crabmeat, drained, flaked
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
- 2 green onions, thinly sliced
- 1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
- 12 won ton wrappers
