Watermelon Rind Pickles - #

Soak rinds in 1/2 bak picking lime and water overnight
- 15 lbs rinds peeled and cubed. No red left on.
- 15 lbs. sugar
- 3/4 gal vinegar (12 cups)
- 1/4 tsp. oil of cloves
- 4 or 5 sticks cinnamon broken or 1/2 tsp. oil of cinnamon.
- 1 bag of pickling lime
- 1 lemon sliced thinly

In a medium bowl, combine all ingredients
- 2 cup whole pecans
- 1/2 cup packed light brown sugar
- 4 tablespoon heavy cream or half and half

Pre-heat oven to 325 degrees
- 1 cup butter, at room temperature
- 1/2 cup granulated sugar
- 2 tsp. vanilla extract
- 1/4 tsp. salt
- 2 cups sifted all-purpose flour
- 1/2 pound pecan halves, or whole almonds, shredded coconut

- 5 oz. shredded reduced-fat sharp cheddar cheese
- 1 tbsp. cornstarch
- 1 cup evaporated fat-free milk
- 1 1/2 tsp. hot sauce for a spicy nacho-style kick

Will add more here later
- Add 4 ot 5 tbsp. unsweetened cocoa to white cake mix batter and will turn out chococlate cake.
- Smithfield hams cook 325 degrees 18 minutes per lb.
- 1 tbsp. mayonnaise to cake mix makes moist cake.
Philly Shrimp Cocktail Dip

- 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
- 3/4 lb. cooked cleaned shrimp, chopped (about 2 cups)
- 3/4 cup KRAFT Cocktail Sauce
- 1/4 cup KRAFT Shredded Parmesan Cheese
- 2 green onions, sliced
- 2 tbsp. horseradish
- little Old Bay Seasoning

Butter an 8"x8" baking pan; spread walnuts on the bottom
- 1 c. chopped walnuts
- 1/2 c. butter
- 3/4 c. brown sugar,packed
- 1/2 c. semi-sweet chocolate chips
7-UP Moist Cake Recipe

Preheat oven to 325F degrees
- Ingredients:
- 1 box yellow cake mix
- 1 small box (4 oz.) instant lemon pudding
- 1 1/2 cups 7 Up (or similar lemon lime soda)
- 4 eggs
- 3/4 cup vegetable oil
- Icing:
- 2 cups confectioners sugar
- 1 tbsp. lemon juice (The bottled lemon juice will work just fine for this recipe too)
- 1-2 tbsp. milk

Mix all and shape into loaf
- Glaze:
- 1 envelope Lipton Onion Soup (Beefy Onion works well)
- 2 lbs. ground beef
- 1 1/2 cups bread crumbs (3 slices)
- 2 eggs
- 3/4 cup water
- 1/3 cup ketchup
- Try 3/4 cup milk instead of water and cook freeform on wire rack covered with foil with slits cut in foil so it will drain. Cover with bacon (12 slices)slightly overlapped.
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 4 tsp. cider or white vinegar
- Put half of glaze on then bacon strips and bake. Save remainder of glaze for table use.
Sweet and Sour Chicken

Chicken breading: Rinse chicken, trim off fat or extras and then cut into 1 inch cubes
- Chicken Breading:
- 3-5 chicken breast
- salt and pepper
- 1 cup cornstarch
- 2 eggs, beaten
- 1/3 cup canola oil
- Sauce:
- 3/4 cups white sugar
- 4 Tablespoons ketchup
- 1/2 cup white distilled vinegar
- 1 Tablespoon soy sauce
- 1 teaspoon garlic salt
