Tomato Sauce

Sweat the shallots and then add the garlic and red pepper flakes
- 3 cans of crushed tomatoes (or 4 cans of whole tomatoes put through a food mill)
- crushed garlic to taste
- shallots
- red pepper flakes about 1 shake (be careful you do not want it to spicy)
- salt & pepper
- fresh basil (optional)
Quinoa with Roasted Garlic, Tomatoes, and Spinach

- 1 whole garlic head
- 1 tablespoon olive oil
- 1 tablespoon finely chopped shallots
- 1/4 teaspoon crushed red pepper
- 1/2 cup uncooked quinoa, rinsed and drained
- 1 tablespoon dry white wine
- 1 cup fat-free, less-sodium chicken broth
- 1/2 cup baby spinach leaves
- 1/3 cup chopped seeded tomato (1 small)
- 1 tablespoon shaved fresh Parmesan cheese
- 1/4 teaspoon salt
Paleo Vinaigrette Dressing

In food processor blend all ingredients except olive oil
- 1/4 cup balsamic or red wine vinegar
- 1-2 TBSPs finely crushed garlic cloves
- 1 Tsp dried mustard
- 1/2 Tsp sea salt to taste
- 1/2 Tsp black pepper
- 1/4 Tsp cayenne pepper to taste
- 3/4 Cup olive oil
Lemon Quinoa Cilantro Chickpea Salad

Bring the vegetable broth to a boil and add the quinoa
- For the dressing:
- 1 cup dry quinoa
- 2 cups vegetable broth
- 1 can garbanzo beans (drained and rinsed)
- 1 cup cherry tomatoes, cut in half
- 2 avocados, diced
- 2 cups chopped spinach
- 1 bunch cilantro
- 1/4 cup sweet onion
- 2 small cloves garlic
- Juice of 2 lemons
- zest of 1 lemon
- 2 teaspoons dijon mustard
- 2 teaspoons olive oil
- 1/2 teaspoon sugar
- 1/2 teaspoon cumin
- dash of salt and pepper
Dirt Pudding

- 1 (14 ounce) bag Oreo cookies
- 2 (3 1/2 ounce) packages French vanilla instant pudding
- 3 cups milk
- 1 cup powdered sugar
- 1 (8 ounce) package cream cheese
- 1/4 cup butter or 1/4 cup margarine (1/4 cup)
- 1 (12 ounce) container Cool Whip
Open-Faced Eggs Florentine

Preheat the oven to 400 degrees F
- 1/2 cup ricotta
- 1/4 cup grated Parmesan
- Six 1/2-inch-thick slices crusty bread
- 2 tablespoons unsalted butter, softened, plus more to fry eggs
- 6 large eggs
- 6 to 8 ounces steamed and drained baby spinach (about 1 cup)
- Kosher salt and freshly ground black pepper
Steak Marinade

Mix olive oil, balsamic vinegar, Worcestershire sauce, soy sauce, Dijon mustard, and garlic in a small bowl
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup Worcestershire sauce
- 1/4 cup soy sauce
- 2 teaspoons Dijon mustard
- 2 teaspoons minced garlic
- salt and pepper to taste
Fresh Corn Salad

Directions In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone
- 5 ears of corn, shucked
- 1/2 cup small-diced red onion (1 small onion)
- 3 tablespoons cider vinegar
- 3 tablespoons good olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup julienned fresh basil leaves
