Easy Peach Cobbler

Preheat the oven to 350 degrees F
- Two 15-ounce cans sliced peaches in syrup
- 1/2 cup (1 stick) butter
- 1 cup self-rising flour
- 1 cup sugar
- 1 cup milk
- Homemade Whipped Cream, recipe follows
- Cook's Note: If you don't have self-rising flour, substitute 1 cup all-purpose flour mixed with 1 1/2 teaspoons baking powder and 1/8 teaspoon salt
- 2 cups whipping cream, chilled in the fridge
- 4 tablespoons sugar
Spinach Salad with Garlic Dressing

In a medium skillet, cook the bacon over medium-high heat until just crisp
- 8 ounces bacon
- 3/4 cup olive oil
- 1/4 cup red wine vinegar
- Pinch salt and pepper
- 1 clove garlic, minced
- 1 pound leaf spinach, tough stems removed
- 8 ounces mushrooms, thinly sliced
Savory and Sweet Pork Stew with Ancho Chiles

Separate the red onions into rings and place in a small plastic container
- 1 medium red onion, sliced
- Juice of 2 limes
- Salt and freshly ground pepper
- 5 or 6 dried ancho chiles, stemmed and seeded
- 4 cups chicken stock

- 1 teaspoon salt

Spicy Tomato Sauce with Fennel, Peppers and Onions

Heat EVOO, 4 turns of the pan, in a deep skillet or Dutch oven over medium heat
- 1/4 cup EVOO – Extra Virgin Olive Oil
- 1 teaspoon fennel seed
- 1 Fresno chili pepper, thinly sliced with seeds or 1 teaspoon crushed red pepper flakes
- 4 cloves garlic, very thinly sliced
- 1 onion, chopped
- 2 cubanelle peppers, seeded and chopped
- Salt
- 2 tablespoons tomato paste
- 1 cup dry white wine
- 1 28- to 32-ounce can San Marzano tomatoes
- 1 pound pici, bucatini, perciatelle or spaghetti
- Pecorino cheese, grated, for topping

- 1 store-bought sponge cake tart shell, 12-inch diameter, available in produce or bakery departments
- 2 ounces chilled limoncello liqueur
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/3 cup lemon curd
- 1/2 pint raspberries
- 1/2 pint blackberries
- 2 teaspoons lemon zest
- 2 tablespoons very thinly sliced mint leaves
