Pasta with Pumpkin Cream Sauce

Prepare pasta according to directions and set aside in a covered pot
- 1 box of pasta of your choosing (linguine and penne both work)
- 1 1/2 cups half-and-half
- 1/2 cup whole milk
- 1 15-ounce can of pumpkin puree
- 1 teaspoon dried sage or 1 tablespoon fresh sage leaves, chopped
- Salt and pepper
- Flour, to thicken if necessary

Homemade Applesauce

Preheat the oven to 350 degrees
- Zest and juice of 2 large navel oranges
- Zest and juice of 1 lemon
- 3 pounds Granny Smith apples (6 to 8 apples)
- 3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (6 to 8 apples)
- 1/2 cup light brown sugar, packed
- 1/4 pound unsalted butter
- 2 teaspoons ground cinnamon

- GLAZE:
- 1/3 cup butter, softened
- 1 cup packed brown sugar

Apple Crostatas

- Crust:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 10 tablespoons (1 1/4 sticks) unsalted butter, chilled, cut into 1/2-inch pieces
- 3 tablespoons ice water
- Filling:
- 2 small Golden Delicious apples, peeled, halved, cored, cut into 1/8-inch-thick slices
