- 14 – 16 ounces firm or extra firm tofu, drained for at least 15 minutes, cut into triangles, slices, or cubes, about 1/2-inch thick
- 1 large carrot, peeled and cut on the diagonal or roll cut
- 1/2 onion, peeled and sliced
- 1/2 red bell pepper cut into chunks

Preheat the oven to 350°F
- 1 2/3 cups quick rolled oats (if gluten-free, be sure to use gluten-free oats)
- 1/2 to 3/4 cup granulated sugar (use more for a sweetness akin to most purchased bars; use less for a mildly sweet bar)
- 1/3 cup oat flour (or 1/3 cup oats, processed till finely ground in a food processor or blender)
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 to 3 cups dried fruits and nuts (total of 10 to 15 ounces)*
- 1/3 cup peanut butter or another nut butter (I used almond butter) (optional)
- 1 teaspoon vanilla extract (optional, namely because I was not convinced that the flavor came through)
- 6 tablespoons melted butter
- 1/4 cup honey, maple syrup or corn syrup
- 2 tablespoons light corn syrup (see Note above)

- 3/4 cup / 4.5 oz / 125 g dark muscovado or dark brown sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup / 4 oz / 115 g coarsely chopped bittersweet chocolate
- 1/3 cup / 80 ml extra-virgin olive oil
- 2 large eggs, lightly beaten
- 1 1/2 cups / 12 oz / 340 g mashed, VERY ripe bananas (~3 bananas)
- 1/4 cup / 60 ml plain, whole milk yogurt
- 1 teaspoon freshly grated lemon zest
