Sam Choy's Asian Macadamia Chicken Salad with fried noodles

From "Sam Choy's Island Flavors"
- Garnish:
- 4 boneless chicken breast halves (skin left on), 8 ounces each
- Asian chicken marinade, recipe below
- 2 cups oil, for deep-frying
- 1-ounce package rice noodles
- 12 wonton wrappers
- 1 medium head iceberg lettuce, shredded
- 2 cups won bok (Chinese cabbage) or napa cabbage, finely chopped
- 1 cup bean sprouts
- 1 cup thin julienned red bell pepper
- 1 cup thin julienned yellow bell pepper
- 1/2 cup thinly sliced (diagonally) green onions
- 1 medium carrot, grated
- 6 radishes, thinly sliced
- 1 cup whole macadamia nuts
- Sweet-and-sour cucumber vinaigrette, see recipe, optional
- 1 head leaf lettuce, leaves separated, for salad bed
- 4 sprigs cilantro, coarsely chopped
Quinoa Chicken Pot Pie

In a medium bowl, whisk eggs and egg whites for 30 seconds
- 2 eggs, large
- 1/4 cup egg whites
- 1 tsp thyme, dried
- 2/3 cups mozzarella cheese, low fat
- 3 cups quinoa, cooked
- 2 cups chicken broth, low sodium
- 1/2 cup milk, 1%
- 1/4 cup flour, whole wheat
- 1 tsp salt
- 1 tsp black pepper, ground
- 10 white mushrooms, sliced
- 3 garlic cloves, minced
- 1 large onion, finely chopped
- 4 cups frozen peas, carrots & corn mix, thawed
- 3 cups cooked chicken breast, diced
- Cooking spray (I use Misto)

- 2 cups dried beans - kidney, piinto, or small red
- 2 smoked ham hocks, or ham shanks
- 3 cups chicken stock
- 1 cup chopped fresh cilantro
- 6 cups water
- 1 Portuguese sausage (10 ounces) or Italian sausage
- 2 cups diced potatoes
- 2 cups diced carrots
- 1 1/2 cups diced onions
- 1/2 cup diced celery
- 2 cups tomato puree

- Garnish:
- 1 pound uncooked linguine
- 1 teaspoon butter
- 1 teaspoon olive oil
- 1 medium red bell pepper, cut into strips
- 1 medium yellow bell pepper, cut into strips
- 2 medium zucchini, sliced (courgette)
- 1/2 pound broccoli florets
- 1/2 pound asparagus, cut into 1-inch pieces
- 1/2 pound sugar snap peas or snow peas, trimmed
- 6 shallots or 6 green onions, sliced very thin
- 1 clove garlic, minced
- 1/4 cup fresh cilantro, chopped
- 2 teaspoons fresh Thai basil or sweet basil, chopped
- salt and pepper
- 1 teaspoon soy sauce
- 1/4 cup freshly grated parmesan cheese

Sam Choy's Pork Hash Loco Moco with Sneaky Fried Rice

Pork Hash: Mix and form patties
- Pork Hash:
- 2 cups diced slow roasted pork butt
- (pork butt crusted with garlic, Hawaiian salt, and black pepper, slow roasted at 300 degrees for 4-5 hours or until fork tender)
- 4 cups boiled potatoes, lightly smashed
- 1/2 cup green onions, chopped
- Salt and pepper to taste
- Sneaky Fried Rice:
- 1/2 cup diced Portuguese sausage
- 1/4 cup diced bacon
- 1/4 cup diced round onion
- 1/4 cup green onion
- 1/4 cup small diced carrot
- Sauté all of the above and add 4 cups cooked brown rice (refrigerated and separated) oyster sauce, shoyu, and siracha chile sauce to taste.
- Assemble with the fried rice on the bottom with the hash on top. Drizzle some of your favorite brown gravy recipe and top it off with an easy over or sunny side up egg. Add your roast pork hash and eggs with the fried rice.

- Beef Marinade (recipe below)
- 1 Tablespoon vegetable oil
- 3 medium tomatoes, cut into wedges
- 1 medium onion, sliced into half-moons
- 1 large green bell pepper (sweet pepper), sliced into strips
- 4 green onions, cut into 1-inch lengths
- 1 stalk celery, thinly sliced on the diagonal
- Stir-Fry Sauce (recipe below)
- Salt and pepper to taste
- Beef Marinade (makes about 1/4 cup)
- 1 Tablespoon soy sauce
- 1 Tablespoon sherry
- 1 Tablespoon vegetable oil
- 1-1/2 teaspoons granulated sugar
- 1 clove fresh garlic, minced
- 1/4 finger of fresh ginger, peeled and minced
- Combine and mix well.
- Stir-Fry Sauce (makes 1 cup)
- 1 cup stock (chicken, beef, vegetable)
- 1 Tablespoon cornstarch
- 2 Tablespoons soy sauce
- 2 teaspoons salt
- 2 teaspoons brown sugar
- 1 teaspoon oyster sauce
- Combine and mix well.
