Almond Butter, Banana, and Chocolate Panini

- 4 slices whole wheat bread
- 4 Tbsp almond butter (recipe follows)
- 1 medium banana, thinly sliced
- 1.5 ounces dark (at least 70% cocao) chocolate, shaved or finely chopped
- powdered sugar for serving, optional
Buffalo Chicken Pizza

Place a pizza stone in a clean oven and heat for 20-25 minutes at 500 degrees F
- 1/2 batch of homemade or store-bought fresh pizza dough
- 2 tsp extra virgin olive oil
- 12 oz boneless skinless chicken breasts, cut into 1″ pieces
- 3 tbsp hot sauce (Recommended: Frank’s Hot Sauce)
- 2 tbsp unsalted butter
- 1/2 – 3/4 cup ranch dressing
- 4 oz blue cheese, crumbled (Recommended: St. Agur, available at Whole Foods or your favorite mild English or French blue cheese)
- 4 oz shredded mozzarella cheese
- Cornmeal, for transferring and cooking pizza

Blueberry Lemon Gelato

Combine the 1st 4 ingredients in a med sauce pan, and bring to a boil
- 2 1/2 cups fresh blueberries
- 1/4 cup blueberry jam
- 1/4 cup water
- 1/4 teaspoon salt
- 2/3 cup sugar
- 3 large egg yolks
- 2 cups 2 % milk
- 3 tablespoons lemon juice
- 1 1/2 teaspoon grated lemon zest
Double Chocolate Banana Muffins

Preheat oven to 350 degrees F
- Dry ingredients:
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1/2 cup dutch-process cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- Wet ingredients:
- 1 cup mashed overripe banana (about 3 medium bananas)
- 1/2 cup agave nectar
- 1/2 cup buttermilk
- 2 tablespoons canola oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon banana extract
- And just for fun:
- 1/4 cup mini semisweet chocolate chips + 2 tablespoons for topping

- 1 cup uncooked wheat berries, rinsed
- Kosher salt
- freshly ground black pepper
- zest and juice from 1 orange
- 1 tsp coarse ground Dijon mustard
- 1 tsp pure maple syrup
- 2 Tbsp extra virgin olive oil
- 1/2 cup chopped pitted soft Medjool dates, about 6 dates
- 1/2 cup walnut halves, toasted and chopped
- 2 big handfuls arugula leaves
- 1/4 cup crumbled soft goat cheese
Strawberry Mango Basil Salsa
