Meditteranean Hummus

This is easy and delicious
- Garnish:
- 1 (15 ounce) can chickpeas, drained
- 2 -4 garlic cloves, minced
- 1/2 cup olive oil (can sub part with juice from chickpeas)
- 3 tablespoons tahini (sesame paste)
- 2 -3 tablespoons plain yogurt or 2 -3 tablespoons sour cream (optional)
- 2 tablespoons fresh lemon juice
- 1 teaspoon cumin
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon cayenne pepper
- 1 sml handful of cilantro (about 2 Tbsp)
- 1 Tbsp chopped greek olives
- 1 Tbsp chopped cilantro
Mediteranean Pilaf

This is definitely a favorite! It's so fresh tasting
- 2 packets Kashi® 7 Whole Grain Pilaf
- 1 cup pine nuts (to reduce fat content, use ½ cup pine nuts)
- 2 cloves organic garlic, minced
- 6 tablespoon extra virgin olive oil
- 3 tablespoon balsamic vinegar
- ½ teaspoon lemon zest
- 1 teaspoon crushed red chili flakes
- 1 teaspoon salt
- 2 bunches fresh basil, coarsely chopped
- 1 organic red bell pepper, diced
- 1 organic yellow bell pepper, diced
- fresh ground black pepper to taste
Scallops Provencal

- 1 pound fresh bay or sea scallops
- Kosher salt and freshly ground black pepper
- All-purpose flour, for dredging
- 4 tablespoons (1/2 stick) unsalted butter, divided
- 1/2 cup chopped shallots (2 large)
- 1 garlic clove, minced
- 1/4 cup chopped fresh flat-leaf parsley leaves
- 1/3 cup dry white wine
- 1 lemon, cut in 1/2
Mom's Buttermilk Pumpkin Bread

This is a lower calorie bread
- 1 1/2 cups all-purpose unbleached flour
- 1 1/4 teaspoons baking soda
- 1 teaspoon fine sea salt
- 1 teaspoon ground cinnamon (spicey chinese is best)
- 1/2 teaspoon ground nutmeg
- 1 cup cooked fresh pumpkin mashed
- 3/4 cup packed brown sugar
- 1/2 cup buttermilk
- 1 egg beaten
- 2 tablespoons butter, softened
Shrimp and Grits

This is a favorite of ours from The Pilot House in Wilmington, NC
- 1/4 cup stone ground grits
- 1/2 cup whole milk
- 4 tbsp butter
- 1 cup flour
- 2/3 cup bread crumbs
- 1/2 tsp minced garlic
- 1/4 tsp fresh lemon juice
- 1/4 cup vegetable oil
- 1 cup sliced mushrooms
- 1 cup slice kielbasa sausage
- 6-8 shrimp
- 1/4 cup white wine
- 3 sliced scallions
- 1 tbsp Low-country seasoning blend
- Egg Wash
- 1 egg
- 1/8 cup of milk
- Low Country Seasoning
- 1/4 tsp black pepper
- 1/4 tsp kosher salt
- 1/4 tsp seasoned salt
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 tsp paprika
- 1 tsp dried parsley
- 1/4 tsp white pepper
- 1/4 tsp cayenne pepper
- 1/4 tsp crushed red pepper
- 1/4 tsp granulated garlic or garlic powder
Roasted Cauliflower with Dates and Pine Nuts

This is delicous! One of our favorites for the holidays
- 1 lg head of cauliflower cut into florets
- Olive oil
- Kosher salt and cracked pepper to taste
- 4 Tbsp unsalted butter
- 1/3 cup pine nuts
- 2 cloves garlic minced
- 1/2 cup pitted medjool dates coursely chopped
Roasted Cauliflower w/ dates & pine nuts

Very delicious!
- 1 large head cauliflower, cut into florets (about 8 cups)
- Kosher salt and freshly cracked black pepper, to taste
- 4 tablespoons unsalted butter
- 1/3 cup pine nuts
- 1 clove garlic, minced
- 1/2 cup pitted Medjool dates, coarsely chopped
Collard Greens

These are the best collard greens
- 4 slices thick sliced bacon, cut into bite size pieces
- 1 red onion, thinly sliced
- 2 tablespoons minced garlic, or to taste (don't skimp on this, about 5-6 cloves)
- 1 bag of collards (any size)
- 1 cup water, or as needed (maybe 2) depends on amt of collards
- 2 tablespoons brown sugar
- 1 Tbsp cider vinegar
- 1 teaspoon crushed red pepper flakes, or to taste ( 1 use 1/2) optional
- salt and black pepper to taste (I use about a tsp salt and lots of fresh ground pepper)
- 1 (15 ounce) can cannellini beans, drained (optional, but very good)
