Don't let the boiled potatoes sit in water or they will become mushy
- 3 pounds russet potatoes (about 3 large), peeled and cut into 1/2-inch chunks
- 2 tablespoons unsalted butter, melted
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 4 tablespoons vegetable oil

- 4 (3/4- to 1-inch-thick) center cut, bone-in pork chops (about 1/2 pound each)
- 3 cups cold water, divided
- 3 tablespoons kosher salt, plus more for seasoning
- 2 tablespoons maple syrup, divided
- 2 tablespoons minced peeled fresh ginger, divided
- Freshly ground black pepper
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 2 large sweet potatoes (about 2 pounds total), cut into 1-inch chunks

- 1 ⁄4 tsp. peppermint extract

- 1 1⁄2 C. steamed milk (you can microwave if easier)
King Arthur's Flourless Chocolate Cake

- Cake:
- 1 cup semisweet or bittersweet chocolate chips
- 1/2 cup (8 tablespoons) unsalted butter
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 to 2 teaspoons espresso powder, optional
- 1 teaspoon vanilla extract, optional
- 3 large eggs
- 1/2 cup unsweetened cocoa powder, Dutch-process cocoa preferred
- Glaze:
