Juicy Pub-Style Burgers

- Gastrique:
- 1/4 cup vegetable or canola oil
- 4 large red onions, halved, peeled, and cut into thin (1/4-inch) slices
- Kosher salt and freshly ground black pepper

- Juice and a few grates of zest from 1 lemon, optional

Sauteed Pork Chops with Bourbon Glaze

- COMBINE:
- 1 Tbsp. light brown sugar
- 1 tsp. smoked paprika
- 1/2 tsp. each granulated garlic and black pepper
- 1/4 tsp. kosher salt
- 2 breakfast center-cut pork loin chops, trimmed (4 oz. each)
- SAUTÉ:
- 1 tsp. safflower oil
- OFF HEAT, DEGLAZE:
- 1/2 cup bourbon
- WHISK IN: 1 Tbsp. maple syrup
- 1 tsp. Dijon mustard
- 1/4 tsp. kosher salt
- 1 Tbsp. cold water

Guinness Beef Stew

- 1 (3 1/2 to 4 pound) boneless beef chuck-eye roast, pulled apart at seams, trimmed, and cut into 1 1/2 inch pieces.

- 12 oz. (2-2/3 cups) unbleached all-purpose flour
- 1 tsp. baking soda
- 1/4 tsp. table salt
- 2 tsp. cream of tartar
- 1/2 lb. (1 cup) unsalted butter, softened at room temperature
- 1-3/4 cups granulated sugar
- 2 large eggs
- 2 Tbs. ground cinnamon
- For the best results, measure your flour by weight instead of volume. (1 cup of all-purpose flour equals 4-1/2 oz.) If you don’t have a scale, be sure to use the proper technique when filling your measuring cups.
