Spice-Roasted Pork Tenderloin

Preheat the oven to 375°
- 4 pork tenderloins (about 4 pounds)
- 2 teaspoons smoked paprika (pimenton)
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon cinnamon
- 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground pepper
Cream and Chocolate Fudge

Put the chocolate and butter in a large heatproof bowl set over a saucepan of steaming but not boiling water
- 4 oz bittersweet chocolate, finely chopped
- 4 Tbsp unsalted butter
- 2 Tbsp heavy cream
- 1 tsp vanilla extract or dark rum
- 1 Tbsp corn syrup
- scant 2 cups confectioners' sugar, sifted
- A shallow 8 inch square pan, buttered

- 1 tablespoon salt
- 2 pounds boneless country-style pork ribs, trimmed
- 3/4 cup packed dark brown sugar
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 1 tablespoon dry mustard
- 1 tablespoon onion powder
- 3/4 teaspoon pepper
- 1/4 teaspoon cayenne pepper
- 6 tablespoons ketchup
- 1 tablespoon cider vinegar
- 1/4 cup wood chips, soaked in water for 15 minutes and drained

- 1 (15-ounce) can tomato sauce
- 1 teaspoon adobo sauce from canned chipotle chiles in adobo sauce
- 1 bay leaf
- 1 tablespoon lime juice
- Salt and pepper
- Chiles:
- 6 (4- to 5-ounce) poblano chiles
- 8 ounces Muenster cheese cut into 12 (1-inch) cubes
- 6 (4-inch) Wooden skewers
- 1 1/2 cups (7 1/2 ounces) all-purpose flour
- 1 1/4 cups (5 ounces) cornstarch
- 2 teaspoons baking powder
- Salt
- 1 1/2 cups mild lager, such as Budweiser
