Brioche Rolls

- Sponge:
- 2 teaspoons active dry yeast
- 1/4 cup whole milk, warm to the touch
- 2 tablespoons sugar
- 1/2 tablespoon honey
- 1/4 cup bread flour (I use King Arthur)
- Dough:
- 1 1/2 cups bread flour (I use King Arthur)
- 3/4 teaspoon salt
- 2 jumbo eggs, at room temperature
- 4 ounces (1 stick) unsalted butter
- Canola oil for bowl
- Egg wash:
- 1 egg, beaten
Kugelhopf Breakfast Rolls

The overnight rise recommended which helps improve the texture and flavor in the finished rolls
- Kugelhopf Dough
- 2 tablespoons warm water (not hot)
- 1 1/2 teaspoons active dry yeast
- 1/3 cup whole milk, warmed (not hot)
- 1 3/4 cups flour (divided into 3/4 cup and 1 cup)
- 1 teaspoon almond extract
- 2 large eggs
- 1 large yolk
- 3 tablespoons granulated sugar
- 1/4 teaspoon table salt
- 8 tablespoons unsalted butter, softened to room temperature
- Filling
- 2 tablespoons unsalted butter, melted
- 1 tablespoon granulated sugar
- Sugar Coating
- 1/4 cup unsalted butter
- 1 teaspoon cinnamon
- 1/2 cup granulated sugar

- 3-4 large gold or white potatoes, peeled, cut up
- 1-2 tablespoons extra virgin olive oil
- 1 teaspoon cumin, or mild curry spice
- 4-5 cloves garlic, minced
- 1 1/2 cups cauliflower florets, about half a smallish head; cut to bite size
- 3 medium-large carrots, peeled and sliced into coins
- 1 zucchini squash, sliced and cut into quarter moons
- 1 yellow summer squash, sliced, cut into quarter moons
- 1 heaping cup shredded cabbage, or slaw mix
- 1 14-oz. can tomatoes with Green Chiles, with juice, diced
- 2 tablespoons roasted Hatch chilies or jalapenos, chopped -- whatever you like
- 1 cup vegetable broth
- 1 tablespoon balsamic vinegar
- 1-2 tablespoons low-sugar apricot jam, to taste -- to balance the heat
- 1 tablespoon rubbed sage
- 1 14-oz. can butter beans, drained and set aside
- fresh chive, chopped; to taste
- vegetable broth, or your favorite non-dairy milk or cream; as needed
- vegan buttery spread, or olive oil; to taste
- hot red pepper chili flakes, to taste, or use hot pepper sauce
- sea salt and fresh ground pepper, to taste
Black Magic Cake (Best Chocolate Cake Ever!)

Oh, and don't be thrown off by the inclusion of coffee in the recipe
- 1 3/4 c all purpose flour
- 2 c sugar
- 3/4 c cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 eggs
- 1 c strong black coffee, cooled
- 1 c buttermilk
- 1/2 c vegetable oil
- 1 tsp real vanilla extract
- CHOCOLATE FROSTING
- 1/2 c margarine, softened
- 2 oz melted unsweetened chocolate, cooled
- 3 c powdered sugar
- 3 Tbsp milk
- 2 tsp real vanilla extract
Lulus Quiona Salad

This recipe is simple and tasty
- DRESSING:
- 2 cups vegetable or chicken broth
- 1 cup raw whole grain quinoa
- 1/4 cup scallions thinly sliced
- 3 or 4 leeks caramelized
- a dash of salt and pepper
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup orange juice
- 2 teaspoons agave
- 2 cloves garlic, minced
- OPTIONAL ADDITIONS:
- Roasted butternut squash, kale, arugula
- edamame, pomegranate seeds, apricots, arugula, cranberries
- salt and pepper to taste
