Rosemary Butter Cookies

So easy to make and delicious
- 1 cup unsalted butter, softened
- 3/4 or so cup of sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/2 C. all-purpose flour
- 1 Tbsp finely chopped fresh rosemary
- 3/4 tsp. course salt
- 1/2 C. fine sanding sugar (if wanted)
Southern Baked Bean Stew

I improvised on the ingredients so with my alterations, the dish was a smash!
- 1 lb dried navy beans (but I used 1 can brown beans and 1 can black beans for color and variety and consistency
- 2/3 lb ground beef
- 1/2 lb. bacon cut into small pieces
- 1 large onion diced
- 1-2 green peppers, diced
- 1/2 cup brown sugar
- 1 can diced tomatoes
- 2 tablespoons Worchestershire sauce
- 1 tsp cayenne pepper
- 3 tablespoons Dijon mustard
- 1/2 cup molasses
- 2 cups beef stock or water
- 1 tsp sale
- 1 tsp black pepper
- 1 C. Tennessee Whiskey (or not, depending)
Honey Garlic Shrimp

This recipe exploded in my mouth with tangible flavors!
- 1/2 C honey (I used blue agave honey)
- 1/2 C Soy Sauce
- 1 Tbsp. jarred minced garlic or 2 tsp. fresh
- 1 tsp. minced ginger or 1 tsp. powdered ginger
- 1 lb. medium uncooked shrimp, peeled and deveined
- 2 tsp. olive oil (if sautéing)
- 1 tsp. ground cumin
- 1 tsp. ground cayenne pepper
- Optional: chopped green onion for garnish
Grilled Mahi Mahi

- 3 wild caught Mahi Mahi fillets
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp paprika — smoked could be used
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- a pinch Cayenne pepper
- 1 tsp dried oregano
- 1 tsp cumin
- 2 tbsp lemon juice

- For The Chicken:
- 2 large boneless and skinless chicken breasts halved horizontally to make 4
- 2 tablespoons flour (all purpose or plain)
- 2 tablespoons finely grated fresh Parmesan cheese
- 1 teaspoon salt
- Cracked pepper
- For The Sauce:
- 1 tablespoon olive oil
- 2 teaspoons butter (or oil)
- 2 tablespoons minced garlic
- 1 1/4 cup chicken broth (stock)
- 1/2 cup half and half or heavy cream (or evaporated milk) - I substituted with unsweetened Almond milk - Yumm
- 1/3 cup finely grated fresh Parmesan cheese
- 2 tablespoons capers (plus 2 tablespoons extra to garnish)
- 1 teaspoon cornstarch (cornflour) mixed with 1 tablespoon of water
- 2-3 tablespoons lemon juice -- juice of 1 lemon (adjust to your tastes)
- 2 tablespoons fresh parsley

Excellent recipe and extremely easy!
- 4 boneless, skinless chicken breasts, pounded thin
- Salt and fresh ground black pepper
- 2 cups all-purpose flour, seasoned w/sale and pepper
- 4 large eggs, beaten with 2 tbsp water and seasoned with
- salt & pepper
- 2 cups panko bread crumbs
- 1 cup vegetable oil or pure olive oil
- Tomato sauce
- 1 pound fresh mozzarella, thinly sliced
- 1/4 cup freshly grated Parmesan
- Fresh basil or parsley leaves, for garnish

- 2 cups light brown sugar lightly packed
- 1/2 scant cup evaporated milk (a little less than 1/2 cup)
- 1/2 pad of butter
- 3-4 drops of vanilla flavoring
Tandori Shrimp

A delish shrimp dinner in 15 minutes
- 1 lb peeled, deveined frozen shrimp
- 1/2 cup fat-free plain Greek (or other) yogurt
- 1 tbsp fresh lime juice
- 2 tsp each curry powder and garlic paste
- 1 onion thinly sliced
- If you want extra sauce to drizzle over shrimp, double the ingredients (except the shrimp)
Blueberry Sorbet
