Chocolate Eclair Cake

You can top this cake with your favourite sunday toppings if you want, anything goes!

- 1 cup all-purpose flour
- 1/2 cup butter (1-stick)
- 1/4 teaspoon salt
- 1 cup water
- 4 large eggs
- -- FILLING --
- 2 pkgs. (3.4 oz) French Vanilla Instant Pudding
- 2 1/2 cups cold milk
- 8 ounces cream cheese, softened (room temperature)
- 1 container (12 oz) Cool Whip
- -- TOPPING --
- 3 ounces semi-sweet chocolate chips (I use Ghirardelli)
- 2 tablespoons butter
- 3 tablespoons milk (3 to 4 tbsp as needed for a thin glaze)
- 1 cup confectioners sugar
Pork Tenderloin in the slow cooker

Place pork tenderloin in a slow cooker with the contents of the soup packet
- 1 2-lb Pork tenderloin
- 1 1-oz package Dry onion soup mix
- 1 cup Water
- 3/4 cup Red wine
- 3 tablespoons Garlic
- 3 tablespoons Soy sauce
- Freshly ground black pepper
Chicken Tikka Masala

- Chicken Tikka:
- 2 cups whole milk Greek yogurt
- 3 tablespoons ancho chili powder
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons ground fennel
- 2 teaspoons ground turmeric
- 1 teaspoon ground cardamom
- 1 teaspoon ground cloves
- 1 teaspoon ground chile de arbol or cayenne powder
- 1 teaspoon ground black pepper, plus more for seasoning
- 2 cloves garlic, finely chopped
- 1 tablespoon finely chopped fresh ginger
- 6 boneless, skinless chicken thighs
- Salt
- 1/2 cup melted ghee
- Masala Sauce:
- 2 tablespoons ghee or canola oil
- 1 medium yellow onion, halved and thinly sliced
- 2 -inch piece fresh ginger, peeled and finely grated
- 1 serrano chile, finely diced
- 3 cloves garlic, finely chopped
- 1 tablespoon tomato paste
- 2 teaspoons smoked Spanish paprika
- 2 teaspoons garam masala
- 1 (28-ounce) can plum tomatoes, pureed until smooth
- Honey
- 1/4 to 1/2 teaspoon chile de arbol or cayenne powder (depending on how spicy you like it)
- 1/2 cup water
- Salt and freshly ground black pepper
- 3/4 cup heavy cream
- Chopped cilantro leaves
- 1 red onion, cut into thin rings and soaked in ice water
Baked Samosas with Tamarind Chutney

Pastry 1.Combine the flour, salt, cumin seeds and oil in a bowl
- Pastry
- 1 cup whole wheat flour
- 1/4 cup of water
- pinch of salt
- pinch of cumin seeds
- 2 tablespoons grape seed oil
- Filling
- 1 cup cooked brown rice
- 1 tablespoon ginger, finely chopped
- 1 1/2 cups chick peas, drained
- 1/4 cup dried cranberries
- 1 tablespoon of cumin seeds
- 1 tablespoon coriander seeds, crushed with hands
- 1 teaspoon chili pepper flakes
- pinch of salt
- 1 tablespoon garam masala
- 1 tablespoon tamarind (broken up with a little water)
- Chutney
- 1/4 cup tamarind pulp
- 1/3 cup warm water
- 1 tablespoon of brown sugar
- pinch of coriander powder
- pinch of paprika
