Easy Corn Bread

Position rack in center of oven; preheat to 400 degrees
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 3/4 cup canned creamed corn
- 1/4 cup (1/2 stick) unsalted butter, melted, cooled slightly
- 1 large egg, beaten to blend
Creamy Spinach Tomato Pasta

Bring a salted pot of water to a boil
- 8 oz dry bow tie pasta
- 1-2 tbsp olive oil or buttery spread or oil spray
- 1 1/2 tbsp minced garlic
- 3 tbsp flour
- 1 tsp onion powder
- 1/2 tsp salt
- 1 1/2 tsp dried oregano
- 1 cup cashew cream or unsweetened creamer
- 1/4 cup Parmesan-type topping, optional
- 1 cup unsweetened milk of choice or additional creamer
- 1 can diced tomatoes, or 14 oz diced tomatoes
- 1 cup fresh or 1/2 cup frozen spinach, optional

- red food coloring if desired
- 1 quart sliced fresh strawberries

- 6 tilapia fillets (about 1 1/2 pounds)
- 1/2 teaspoon salt
- 1/3 cup melted butter or olive oil
- 1 teaspoon minced garlic
- 1 teaspoon marjoram leaves
- 3/4 teaspoon ground mustard
- 3/4 teaspoon basil
- 3/4 teaspoon oregano
- 1/2 teaspoon coarse ground black pepper
- 1 1/2 cups chopped fresh spinach leaves
- 3/4 cup panko bread crumbs
- 1/3 cup finely chopped red pepper

- 8 ounces dried angel hair pasta
- vegetable oil spray
- 10 ounces chunk light tuna in water, rinsed and drained
- 2 cans low fat cream of chicken soup
- 5 ounces sliced canned water chestnuts, drained
- 8 ounces canned mushrooms, drained
- 1/4 cup milk
- 1/2 teaspoon salt
- 1 tablespoon plain dry bread crumbs
