- FOR THE CAKE
- 3/4 cup unsweetened cocoa powder
- 1 1/4 cup hot water
- 2/3 cup sour cream
- 2 2/3 cups all-purpose flour

- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 sticks unsalted butter, softened
- 1/2 cup vegetable shortening

- 1 tablespoon vanilla
- FOR THE BUTTERCREAM
- 2 1/4 cup sugar
- 1/2 cup all purpose flour
- 2 1/4 cups milk
- 1/2 cup heavy cream
- 4 1/2 sticks unsalted butter, soft but cool, cut into small pieces
- 2 Tablespoons creme de menthe
- 2 1/4 teaspoon peppermint extract
- FOR THE GANACHE
- 6 oz dark chocolate, coarsely chopped
- 1/2 cup heavy cream
- 1 tablespoon creme de menthe
- 1/2 teaspoon peppermint extract

- 2 cups (4 sticks) unsalted butter, at room temperature
- 1 1/2 cups granulated cane sugar
- 1 1/2 cups dark brown sugar, firmly packed
- 4 large eggs

- 4 1/2 cups unbleached, all-purpose flour
