Pork Chops Alla Pizzaiola

- 2 bone-in 1"-thk pork loin center-cut chops (abt 12 oz ea)

Preheat the oven to 375 degrees F

- ¾ pound dried lasagna noodles (I use the no boil variety)
- 4 cups whole milk
- 12 T. (1½ sticks) unsalted butter, divided
- ½ cup all-purpose flour
- 1 tsp.freshly ground black pepper
- 1 tsp. ground nutmeg
- 1½ pounds portobello mushrooms – add more mushrooms
- 1 cup freshly ground Parmesan
Cucumber Noodles with Peanut Sauce

1. First, make the peanut sauce
- For the Peanut Sauce:
- 2/3 cup creamy natural peanut butter
- 2 tablespoons rice vinegar
- 2 1/2 tablespoons gluten-free Tamari (or soy sauce)
- 2 teaspoons sesame oil
- 2 teaspoons agave (or honey)
- 1 teaspoon fresh lime juice
- 1 clove garlic, minced
- 1 teaspoon finely grated ginger
- Dash of red pepper flakes, to taste
- 1/3 cup warm water
- For the Cucumber Noodles:
- 2 large seedless cucumbers
- 1/3 cup chopped fresh cilantro, for garnish
- 1/3 cup chopped peanuts, for garnish
Eggplant Parmesan with Ricotta and Fresh Bail

1. Peel the eggplant and slice it 1/2 inch thick
- 2 medium eggplants (about 2 pounds total)
- 1/2 c mayonnaise
- 1/2 c bread crumbs
- 1 1/2 c tomato sauce
- 1 garlic clove, pressed
- 2 T dry red wine
- 1 c part-skim ricotta cheese
- 1/2 c grated Parmesan
- 1/2 pound (about 2 1/2 c) grated mozzarella cheese
- 2 T minced fresh or 1 tsp. dried bail

- 2-3 medium sweet potatoes, chopped into thin wedges or sticks/strips* (you don't want them too thick or they will take forever to cook)

- salt to taste (I used about 1 teaspoon - you can always add extra salt at the end)
