Low Fat Whole Wheat Zucchini Bread

1 Preheat oven to 350. 2 Mix dry ingredients
- 1 1/2 cups whole wheat flour
- 3/4 cup sugar
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 tsps cinnamon
- 2 eggs
- 2 1/4 cups zucchini (medium)
- 1/4 cup oil
- 11/2 tsps vanilla
- 1/4 cup walnuts
Black bean, orange, corn and quinoa salad

Cook 1 cup quinoa with 1 cup water and 1 cup chicken broth for 10-15 minutes
- Dressing:
- 1 cup quinoa
- 1 can black beans, rinsed
- 1 orange, segmented and cut into small chunks
- 1 cup corn kernels
- 1/2 red onion, chopped
- 1 red or orange bell pepper, diced
- 1 small bunch cilantro, chopped
- 1 jalapeño, minced
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Sauteed Shrimp Cocktail

In a large skillet, heat the oil over medium-high heat
- 2 tablespoons olive oil
- 1 pound jumbo shrimp, peeled tail-on, deveined
- 1 tablespoon herbes de Provence
- Salt and freshly ground black pepper
- 1 1/4 cups plain yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons whole-grain mustard (recommended: Maille)
- 1 1/2 tablespoons maple syrup
- 1 teaspoon turmeric
- 1/4 cup chopped fresh basil leaves
Zucchini Pasta with Creamy Avocado Sauce and Shrimp

Using your Spiralizer, make zucchini noodles
- 10 oz/300g cooked shrimps, peeled (weighted with shells)
- 2 medium zucchini, peeled
- For the sauce
- 1 avocado
- the juice of 1/2 lemon
- 3 tbsp coconut milk
- 1/4 tsp tabasco
- salt to taste
Miso Sesame salad dressing

Whisk miso paste into rice vinegar in a bowl until smooth
- Original recipe makes 4 servings
- 1 1/2 tablespoons miso paste
- 2 tablespoons rice vinegar
- 1 1/4 tablespoons honey
- 1 tablespoon minced fresh ginger root
- 1 tablespoon sesame oil
- 1 1/2 teaspoons lime juice
- 1 teaspoon toasted sesame seeds
Soba Noodles with Sweet Ginger Scallion Sauce

Mix all the ingredients for Sweet Ginger Scallion sauce in the bowl, check for the seasoning
- For Sweet Ginger Scallion Sauce:
- Soba noodles – 1 9oz packet.
- Salt and Pepper as per taste.
- Sesame seeds – 2 Tbsp lightly toasted.
- Cucumber thinly julienne optional.
- Lime wedges optional.
- Scallions – 1 1/2 cup finely chopped.
- Ginger – 2 Tbsp minced.
- Cilantro – 1/4 cup chopped.
- Sesame oil/ grape seed oil/ any neutral oil – 2-3 Tbsp.
- Chili oil – 2 tsp.
- Soy sauce – 1Tbsp.
- Rice wine vinegar – 2 Tbsp.
- Honey – 2 Tbsp.
- Salt – 1 tsp, as soy sauce is salty too so be careful with the salt.
- Black pepper – 1 tsp
Ice Cream Bon Bons

1. line a small baking sheet with parchment paper, and set aside
- 3-4 c ice cream of your choice
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon vegetable oil (you can substitute coconut oil if you want!)
Thai RedCurry Pork

Cut the onion in half from top to bottom, then into 1/4-inch slices, separating them into slivers
- 1 small sweet onion
- 1 medium red bell pepper
- 1 lime
- 8 ounces pork loin, preferably well chilled
- 2 tablespoons raw sunflower seeds (may substitute unsalted peanuts)
- 2 teaspoons canola oil
- 1 tablespoon plus 1 teaspoon red curry paste (see headnote)
- 2 teaspoons light brown sugar
- 1 tablespoon fish sauce
- 13 1/2 to 14 ounces canned low-fat coconut milk
- Leaves from 12 sprigs Thai basil (see headnote)
Apple Walnut Cranberry Salad

Instructions In a large bowl, toss together all the salad ingredients
- 1 bag 50% blend mixed greens and spinach, washed
- 2 green apples, sliced
- 1/3 cup dried cranberries
- 1/2 cup gorgonzola cheese, crumbled
- 1/2 cup walnut pieces
- Apple Cider Vinaigrette
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon freshly ground black pepper
Protein Power Smoothie

Simply blend together milk, banana, mixed berries, protein powder, and 3 to 5 ice cubes until smooth and frothy
- 3/4 cup milk (skim, soy or almond)
- 1/2 banana
- 1 cup frozen mixed berries
- 1 scoop vanilla whey protein powder
