Grandmother's Buttermilk Cornbread

This is my grandmother's cornbread recipe and it's the best - sweet and moist!
- Ingredients
- 1/2 * 1/2 cup butter
- 2/3 * 2/3 cup white sugar
- 2 * 2 eggs
- 1 * 1 cup buttermilk
- 1/2 * 1/2 teaspoon baking soda
- 1 * 1 cup cornmeal
- 1 * 1 cup all-purpose flour
- 1/2 * 1/2 teaspoon salt
Summer Corn and White Bean Soup

This quick, fiber-packed soup is a terrific way to use fresh corn
- 1 tablespoon canola oil
- 1 cup sliced green onions
- 3/4 cup chopped cooked ham (about 4 ounces)
- 3 cups fresh corn kernels (about 5 ears)
- 1/2 teaspoon salt
- 1 can diced tomatoes
- 2 (15-ounce) cans navy beans, rinsed and drained
- 2 (14-ounce) cans fat-free, less-sodium chicken broth
- 2 (4.5-ounce) cans chopped green chiles, undrained
- 1 teaspoon lemon pepper
- 1 teaspoon cumin
Delicious Ham and Potato Soup

This is a delicious recipe for ham and potato soup that a friend gave to me
- Ingredients
- 3 1/2 * 3 1/2 cups peeled and diced potatoes (I use more)
- 1/3 * 1/3 cup diced celery (I use more)
- 1/3 * 1/3 cup finely chopped onion (more)
- 3/4 * 3/4 cup diced cooked ham (more)
- 3 1/4 * 3 1/4 cups water
- 2 * 2 tablespoons chicken bouillon granules
- 1/2 * 1/2 teaspoon salt, or to taste (I DON'T ADD SALT)
- 1 * 1 teaspoon ground white or black pepper, or to taste
- 5 * 5 tablespoons butter
- 5 * 5 tablespoons all-purpose flour
- 2 * 2 cups milk

- * 14.4 oz can fat free chicken broth
- 3 * 3 scallions, chopped
- 1 * 1 tsp garlic powder
- 1 * 1 tsp onion powder
- 1 * 1 tsp cumin
- 1 * 1 tsp cayenne pepper (to taste)

Broccolini, Cherry Tomato, and Butter Bean Udon

Heat a large pot of salted water to a boil
- 1 to 1 1/2 Bundles Udon Noodles
- Oil, about 2-3 Tbs
- 3-6 Stalks of Broccolini, depending on size
- 1/2 tsp Red Pepper Flakes
- Black Pepper
- Salt
- 10 Cherry Tomatoes, quartered
- 1/2 Cup Butter Beans/Lima Beans, drained and rinsed
- 1-2 tsp Italian Herbs
- Balsamic Vinegar, for drizzling
