- 1 teaspoon dark sesame oil, divided
- 2 teaspoons minced peeled fresh ginger
- 2 garlic cloves, minced
- 1 cup finely chopped red bell pepper
- 1 cup chopped green onions
- 1 teaspoon curry powder
- 2 teaspoons red curry paste
- 1/2 teaspoon ground cumin
- 4 teaspoons low-sodium soy sauce
- 1 tablespoon brown sugar
- 1/2 teaspoon salt, divided
- 1 (14-ounce) can light coconut milk
- 2 tablespoons chopped fresh cilantro
- 4 (6-ounce) tilapia fillets
- Cooking spray
- 3 cups hot cooked basmati rice
- 4 lime wedges

- 1 lb medium shrimp, cooked and cleaned
- 3/4 cup fresh lime juice (about 6 small limes)
- 3 tablespoons grainy mustard
- 1/8 teaspoon sugar

- 3/4 cup olive oil
- 1/3 cup fresh basil, chopped

- 3 cups chopped grilled chicken breast strips (such as Tyson)
- 1 1/2 cups chopped spinach
- 1 cup grape tomatoes, halved
- 1/2 cup chopped red bell pepper
- 1/4 cup prechopped red onion
- 2 tablespoons chopped fresh basil
- 1 teaspoon chopped fresh oregano
- 2 tablespoons red wine vinegar
- 1 tablespoon extravirgin olive oil

Crab & Goat Cheese Empanadas

Dough: Combine flour, salt, and butter in food processor, run until it becomes a coarse meal
- For the dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 pound plus 2 tablespoons butter, cut into small cubes
- 1/3 cup cold water
- Filling:
- 1 tablespoon, olive oil
- 1 Spanish onion, chopped
- 3 cloves garlic, minced
- 1/4 habanero, minced
- 1 pound picked lump crabmeat
- 1 cup soft goats cheese
- 1 teaspoon chopped thyme
- 1/4 cup chopped Italian parsley
- Salt and freshly ground black pepper
- Mango Chutney:
- 2 mangoes, peeled, seeded and chopped
- 1 tablespoon fresh ginger, chopped
- 1/4 Spanish onion, chopped
- 1 tablespoon rice wine vinegar
- 2 tablespoons sugar
- 1 tablespoon cornstarch, mixed with 2 tablespoons water
- *Combine all ingredients in a saucepan. Cook on low for 30 minutes.

- 1/4 cup white wine
- 10 ounces grated Cheddar

- 1 tablespoon olive oil
- 1 onion (8 oz.), peeled, halved, and thinly slivered lengthwise
- 2 cloves garlic, peeled and minced
- 1 can (32 oz.) diced or crushed tomatoes
- 8 ounces red or white thin-skinned potatoes (about 1 in. wide), scrubbed and quartered
- 1 or 2 fresh hot green chilies such as jalapeños, rinsed, stemmed, seeded, and minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
