- Mustard Green Onion Sauce
- 1/4 cup white wine vinegar
- 2 tablespoons Dijon mustard
- 1/2 cup olive oil
- 1/4 teaspoon kosher salt

- 1/4 cup thinly sliced green onions, light and dark parts
- 2 tablespoons finely chopped fresh flat leaf parsley leaves

- 3 tablespoons Spanish paprika

- 2 teaspoons ground fennel seeds

- 12 oz medium asparagus, trimmed
- 2 Japanese eggplants, halved lengthwise

- 2 large Portobello mushrooms, stemmed
- 3/4 cup olive oil
- 2 tsp kosher salt
