Set oven to 425 degrees (oven rack to second-lowest position)
- 4 tablespoons mayonnaise
- 4 tablespoons butter, softened
- 1 teaspoon fresh minced garlic
- 1 dash black pepper
- 1 1/4 cups crumbled feta cheese
- 1/2 cup grated parmesan cheese
- 1 cup monterey jack cheese, shredded
- 3 green onions, finely chopped
- 12 tablespoons parmesan cheese (can use more)
- 1 large crusty rustic bread, unsliced (or use ciabatta bread)

Set oven to 400 degrees F
- 1 lb hot Italian sausage, casings removed (can use mild, spicy is better to use)
- 1 lb ground beef
- 1 large onion, chopped
- 2 tablespoons fresh minced garlic (or to taste)
- 1 teaspoon dried oregano, to taste
- 1/2-1 teaspoon dried thyme
- 1 (28 ounce) can plum tomatoes, undrained and chopped
- 2 tablespoons tomato paste
- 1/4 teaspoon cayenne pepper (or adjust to heat level, can use crushed chili flakes)
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 teaspoon seasoning salt (or to taste, can use white salt)
- 1/2 teaspoon ground black pepper (or to taste)
- 1 lb dry penne pasta (can use more or less if desired)
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped fresh parsley
- 12 ounces provolone cheese, grated (more if desired)
Chicken Enchilada Casserole

In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender

- 2 cups cooked chicken or cooked turkey
- 1 (4 ounce) can green chili peppers, chopped

- 2 1/2 cups chicken broth

- 1/2 cup reserved pasta water
- 7 tablespoons extra virgin olive oil, divided
- 4 tablespoons fresh minced garlic, divided
- 1 teaspoon dried red pepper flakes
- 1/4 cup chopped parsley
- 2 teaspoons fresh lemon juice

Milk Boiled Corn on the Cob

Fill a large stock pot half full with water (use a large enough pot to hold all the corn)

- 1/4 cup whipping cream, unwhipped (or use 1 1/4 cups milk)
- 1/3 cup sugar (can use more sugar can also use brown sugar)
- 1/4 cup butter (optional and to add to the water)

- 1/2 cup vegetable shortening, room temperature (Crisco shortening is good)

- 1 teaspoon dried Italian herb seasoning
