Ooey Gooey Cheese Sticks with Spicy Ranch Dip

Skip the boxes in the freezer aisle and make cheese sticks at home
- Avocado Ranch Dip:
- 1 pound block Monterey Jack cheese (or Brie)
- 3/4 cup all-purpose flour
- 3 large eggs
- 3 tablespoons whole milk
- 2 cups crushed tortilla chips
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons onion powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 6 cups canola oil
- Kosher salt
- 1 cup Greek yogurt
- 1 avocado
- 1 tablespoon ranch spice (recipe below)
- 1 lime
- 1/4 cup buttermilk
- 1/4 cup cilantro
- 1/4 cup parsley leaves chopped
- Ranch Spice Mix:
- 1/2 cup and 4 tablespoons onion powder
- 1/2 cup and 1 tablespoon garlic powder
- 1/2 cup salt
- 4 tablespoons ground black pepper
- 3 teaspoons lemon powder
- 2 teaspoons smoked paprika
- 2 teaspoons aleppo
- 2 teaspoons dried parsley
- For Brie cheese sticks:
- Date Marinara Sauce:
- 1/4 cup olive oil
- 1/2 cup red wine
- 1 cup sweet onions. chopped
- 6 cloves garlic. smashed
- 2.2 pounds tomatoes, chopped
- 2 cup dates, pitted and chopped
- 1/2 cup basil leaves
Carmelized Onion Sweet Potato Salad

Heat oil in a heavy skillet over medium heat
- 2 tablespoons olive oil
- 3 red onions, peeled, halved and thinly sliced
- 1 tablespoon Dijon mustard
- 1/4 cup balsamic vinegar
- 1 teaspoon honey
- 1 tablespoon finely chopped orange zest
- 1 tablespoon finely chopped fresh thyme
- 3 sweet potatoes, sliced into 1/2-thick slices
- Vegetable oil
- Salt and freshly ground pepper
Stuffed Shells

Preheat oven to 350 degrees
- 6 quarts water
- 1 pkg (8 oz) manicotti shells or (12 oz) regular large stuffing shells
- 4 Italian link sausages (sweet)
- 1/4 C chopped onion
- 1 jar (32 oz) spaghetti sauce with mushrooms and tomato chunks
- 1 pkg (8oz) mozzarella, shredded
- 2 pkg (15 oz each) Ricotta cheese
- 6 Tbl Parmesan
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 eggs
Spiced Brown Butter Linzer Cookies

Cook butter in a large saucepan over medium heat, stirring often, until butter foams, then browns, 5–8 minutes
- 1 1/2 cups (3 sticks) unsalted butter
- 3/4 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon finely ground black pepper
- 3 3/4 cups all-purpose flour, plus more
- 1 1/2 cups granulated sugar
- 2 teaspoons finely grated lemon zest
- 1 vanilla bean, split lengthwise
- 1 large egg, room temperature
- 2 large egg yolks, room temperature
- Powdered sugar (for dusting)
- 1/2 cup red currant jelly

- 1 1/2 teaspoons coriander seeds
- 1 1 1/2-inch piece cinnamon stick

- 1 teaspoon cumin seeds
- 1/8 teaspoon cardamom seeds (from 2 whole green cardamom pods)
- 1 teaspoon fleur de sel or coarse kosher salt
- 1/2 teaspoon ground mace
- Curry Paste:
- 10 small dried red chiles (such as chiles de árbol), stemmed
- 25 long fresh cilantro stems
- 1 medium red onion, chopped
- 6 garlic cloves, peeled
- 1 1 1/2-inch piece fresh galangal or peeled fresh ginger, thinly sliced
- 1 1/2 tablespoons chopped or grated lemongrass
- 3/4 cup water
- Beef:
- 1 long mild yellow chile (such as banana chile)
- 4 tablespoons vegetable oil, divided
- 2 1-pound pieces beef shank (each about 2 inches thick)
- 6 cups unsweetened coconut milk
- 25 long fresh cilantro stems
- 1 1/2 cup fish sauce (such as nam pla or nuoc nam)
