1. Preheat oven to 350 degrees F
- 1/4 Cup peanut oil
- 1 medium red onion, sliced
- 1 cup brown sugar
- 2 Granny Smith apples, cored and sliced
- 1/2 Cup red wine vinegar
- 2 Cups red wine
- 2 Cups orange juice
- 1 cinnamon stick
- 1 tsp dry ginger
- Salt and freshly ground black pepper to taste
- 4 pounds red cabbage, cut into julienne
Onion Rings

Divide the onion rings between 2 large sealable plastic bags and add enough buttermilk to coat the rings
- 2 to 3 large Vidalia onions, cut into slices 1 inch thick, separated into rings
- 4 to 6 cups buttermilk
- Vegetable oil for deep frying
- 2 1/2 cups all-purpose flour
- 1/3 cup cornstarch
- 1 1/2 tsp. kosher salt, plus more, to taste
- 3/4 tsp. baking soda

Pretzel-Crusted Pork Schnitzel

Bring apple cider, brown sugar, and 1 Tbsp
- 4 cups apple cider
- 1 tablespoon light brown sugar
- 1 tablespoon kosher salt, plus more
- 4 4-oz. boneless pork chops or cutlets, pounded to 1/8” thickness
- 6 oz. pretzels
- 4 large eggs, beaten to blend
- 1/3 cup whole grain mustard
- 3/4 cup all-purpose flour
- Freshly ground black pepper
- Vegetable oil (for frying; about 3 cups)
- Flaky sea salt (such as Maldon)
- Flat-leaf parsley leaves with tender stems and lemon wedges (for serving)
Prosciutto and Goat Cheese Calzones

1.Remove pizza dough from fridge and divide into 4- to 5-oz portions
- pizza dough (about 4- to 5-oz per calzone)
- 2 cups grated mozzarella cheese, about 8 oz
- 1 cup crumbled goat cheese, 4 oz (or a mix of goat and ricotta)
- 2 tablespoons parsley chopped with 2 cloves garlic
- 1/4 cup finely sliced scallions, including some of the greens
- 2 slices prosciutto, finely diced/sliced
- salt and pepper to taste
- 1 egg beaten with 1 tablespoon water for eggwash
Salmon En Croute

Preheat oven to 425°F. Heat a large non-stick skillet over medium heat
- 1 tablespoon extra-virgin olive oil, plus some for drizzling
- 1 small onion, chopped
- 1/2 pound button mushrooms and stems, cleaned and chopped
- 2 sprigs dill, chopped
- 1/4 cup flat leaf parsley leaves, chopped (a small handful)
- Juice of 1/2 lemon
- 1 tablespoon Dijon mustard, optional
- 2 hard-boiled eggs, chopped
- Salt and freshly ground black pepper, to taste
- 4 6-ounce salmon filets, skin removed
- 2 sheets frozen puff pastry, 11 x 17 inches, defrosted but still cold
- 1 egg, beaten with a splash of water
