Chicken Strawberry Salad

1.Heat oil in a skillet over medium heat
- 2 teaspoons corn oil
- 1 skinless, boneless chicken breast half, cut into bite-size pieces
- 1/2 teaspoon garlic powder
- 1 1/2 tablespoons mayonnaise
- 1/2 lime, juiced
- 1/2 teaspoon ground ginger
- 2 teaspoons milk
- 2 cups fresh spinach, stems removed
- 4 fresh strawberries, sliced
- 1 1/2 tablespoons slivered almonds
- freshly ground black pepper to taste
Pimiento Cheese

- 3/4 C shredded sharp cheddar

- 2 oz cream cheese, room temperature
- 2 Tbl chopped roasted red pepper

Toast pumpkin seeds in a dry medium skillet over medium-low heat, tossing often, until golden, about 2 minutes
- 1/4 cup raw shelled pumpkin seeds
- 2 tablespoons sesame seeds

- 4 (8-ounce) packages cream cheese, room temperature
- 1 1/4 cups plus 2 tablespoons sugar
- 1/4 cup unsweetened cocoa powder (preferably Scharffen Berger)
- 4 large eggs
- Topping
- 3/4 cup whipping cream
- 6 ounces Scharffen Berger 70% Cocoa Bittersweet Chocolate,* chopped
