Bacon Tomato Jam

Place a large heavy-bottomed pan over medium-high heat
- 1/2 pound thick cut bacon (small diced)
- 1 small onion (peeled and small diced)
- 1/3 cup granulated sugar
- 1/2 cup fresh horseradish (peeled and finely grated)
- 1 pound vine-ripened tomatoes (small diced)
- 1/2 cup sherry vinegar
- 1 tablespoon dijon mustard
- kosher salt and freshly ground black pepper (to taste)
Chipotle Cranberry Sauce

Place chiles in medium saucepan filled with water; bring to boil
- 2 dried chipotle chiles*
- 1 12-ounce package fresh or frozen cranberries
- 1 1/3 cups sugar
- 3 tablespoons fresh lemon juice

- 1 teaspoon brown mustard seeds
- 1 teaspoon cumin seeds

- 1 teaspoon black peppercorns
- 2 bay leaves
- 2 3 1/2–4-pound chickens, cut into 8 pieces each
- Assembly:
- 6 cups all-purpose flour, divided
- 1 tablespoon cornstarch
- 1 tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
