- 1 large head green cabbage (about 3 1/2 pounds), finely shredded on a mandoline or by hand

- 1/2 cup diced carrots

- 1 (day-old) loaf country-style bread, cubed
- 2 to 4 cups homemade chicken stock
- 12 ounces goat cheese
- 1/2 cup fresh flat-leaf parsley, chopped

- 1 •1 head of garlic (about 15 cloves), peeled, chopped
- 1/2 •1/2 cup ground ancho chiles
- 2 •2 tablespoons ground cumin
- 1/2 •1/2 teaspoon ground allspice

- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon freshly ground black pepper
- 4 tablespoons chilled unsalted butter, cut into pieces
- 1 large egg, beaten to blend
- 1 cup buttermilk
- 1/2 small onion, finely chopped
- 1 jalapeño, seeded if desired, finely chopped
- Vegetable oil (for frying; about 6 cups)
Turmeric Dressing

- 3/4 cup tahini, whisked smooth
- 3/4 cup hot water (plus more to adjust consistency to your liking)
- 1/2 cup lemon juice (Meyer lemons preferably, from about 2 lemons)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon honey or agave
- 2 1/2 teaspoons ground turmeric
- 2 cloves garlic, chopped
- Salt and freshly ground black pepper to taste
- Toasted sesame seeds and chopped cilantro for garnish
