White Chocolate Cranberry Pistachio Biscotti

1.Preheat oven to 350°F (177°C)
- Egg wash:
- 2 1/4 cups all-purpose flour (plus more for your hands)
- 1 cup packed light or dark brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 3 large eggs
- 1 tablespoon canola or vegetable oil (or melted coconut oil)
- 1 teaspoon vanilla extract
- 3/4 cup Diamond of California pistachios
- 3/4 cup dried cranberries
- 8 - 10 ounces white chocolate, coarsely chopped (226g - 282g)
- 1 large egg beaten with
- 1 tablespoon milk
Shrimp Burgers

Divide the shrimp in half
- • 1 pound medium shrimp, shelled and deveined
- • 1 egg
- • 2 tablespoons chopped cilantro
- • 1 garlic clove, peeled
- • 1/2 cup Panko breadcrumbs
- • 1 poblano chile, roasted, peeled, stemmed, seeded and diced
- • 2 tablespoons chopped white onion
- • Sea salt and freshly ground black pepper, to taste

In a medium saucepan, bring the broth to a simmer
- 5 cups reduced-sodium chicken broth
- 2 tablespoons butter
- 2 ounces pancetta, chopped
- 1 link (about 6 ounces) spicy Italian sausage, casing removed

- 1 cup chopped red bell pepper
- 4 ounces button mushrooms, coarsely chopped

Scalloped Potatoes au Gratin

- 3 pounds yellow potatoes, like Yukon gold, unpeeled, sliced into 1/4-inch slices
- 3 cups cold milk (1 percent low-fat)

- 1 3/4 cups grated Gruyere cheese (6 ounces)

Simplest Asian Dressing

Whisk garlic, soy sauce, and vinegar in a small bowl
- 1/2 small garlic clove, finely grated
- 1 tablespoon reduced-sodium soy sauce
- 2 teaspoons unseasoned rice vinegar
- 1/2 cup olive oil
- 1/2 teaspoon toasted sesame oil
- Kosher salt and freshly ground black pepper
Gorgonzola Polenta

•Bring 5 cups chicken broth to boil in heavy 4-quart saucepan
- •5 cups (or more) low-salt chicken broth
- •1 3/4 cups polenta (coarse cornmeal)*
- •3/4 cup crumbled Gorgonzola cheese (about 4 ounces)
- •1/3 cup whipping cream
- •*Sold at some supermarkets and at natural foods stores and Italian markets. If unavailable, substitute an equal amount of regular yellow cornmeal and cook about half as long.
