Slow Cooker French Onion Soup

First, place all your onions in a 5-quart or larger slow cooker
- 3 pounds yellow onions, peeled, cut in half and sliced, thin
- 2 tbsp. unsalted butter, melted
- 2 tbsp. olive oil
- 2 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper or more as you like
- 2 sprigs fresh thyme
- 1/4 cup balsamic vinegar
- 8 cups beef broth
- 1/3 cup brandy, highly recommended but optional
- 4 to 6 baguette slices, toasted
- 1 1/3 to 2 cups grated Gruyere cheese
Lindy's-Style Cheesecake

Crust: Combine flour, sugar, lemon peel and vanilla in bowl
- Crust:
- 1 C sifted flour
- 1/4 C sugar
- 1 tsp grated lemon peel
- 1/2 tsp vanilla
- 1 egg yolk
- 1/2 C butter, softened
- Filling:
- 5-8 ounce packages cream cheese, softened
- 1-3/4 C sugar
- 3 Tbl flour
- 1/4 tsp salt
- 1 tsp grated orange peel
- 1/2 tsp grated lemon peel
- 5 medium eggs
- 2 egg yolks
- 1/4 C whipping cream
Fresh Ricotta

Bring milk, cream and salt to a boil in medium saucepan
- 2 C whole milk
- 1 C heavy cream
- 1/2 tsp kosher salt
- 2 Tbl fresh lemon juice or distilled white vinegar
Basil Cream Sauce

- 1 Tbl olive oil
- 1 Tbl butter
- 3 C fresh basil
- 1.5 C heavy cream
- Salt and pepper to taste

- 1/4 cup sugar
- Ganache:
- 3 1/2 ounces bittersweet chocolate (do not exceed 61% cacao), finely chopped
- 2 tablespoons 1/4 stick) cold unsalted butter, cut into 1/2" cubes
- 1/2 cup heavy cream
- 1 tablespoon finely grated orange zest
- 1/2 teaspoon ground cloves
- 1/8 teaspoonground allspice
- 1/8 teaspoon kosher salt

- 3/4 cup freshly squeezed lime juice (about 8 large limes)
- 1/2 cup clear tequila
- 1/4 cup soy sauce
- 1 bunch roughly chopped fresh cilantro, leaves and stems
- 1 jalapeno pepper, seeded and diced
- 1 serrano pepper, seeded and diced
- 1 teaspoon cumin powder
- 1 tablespoon freshly cracked black pepper
- 1 1/2 to 2 pounds flank steak
- 12 corn tortillas, wrapped in foil
- 1/2 cup chopped fresh cilantro
- 1 bunch radishes, cleaned, ends cut and sliced
- 1/3 cup grated queso fresco cheese
- 2 ripe avocados, seeded and sliced
