White Chocolate Candy Bars

Line the bottom and sides of an 8 x 8 inch (20 x 20 cm) square baking pan with aluminum foil
- 3/4 cup (75 grams) pistachios, chopped
- 9 ounces (255 grams) white chocolate, chopped
- 1 1/2 teaspoons grated orange zest (the outer orange skin of an orange)
- 1 tablespoon freshly squeezed orange juice
- 1/4 cup (60 ml) heavy whipping cream
- 1 tablespoon light corn syrup
- 3/4 cup (80 grams) dried cranberries or cherries, cut into small pieces
- 1/2 cup (80 grams) dried apricots, cut into small pieces

In a large bowl, stir together warm water, yeast, and sugar
- 1 1/2 cups warm water (110 degrees F/45 degrees C)
- 1 tablespoon active dry yeast
- 2 tablespoons white sugar
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 4 cups bread flour
Super Moist Pumpkin Bread

Preheat oven to 350 degrees F (175 degrees C)
- 3 1/2 cups all-purpose flour
- 2 cups packed dark brown sugar
- 2/3 cup white sugar
- 2 cups pumpkin puree
- 1 cup vegetable oil
- 2/3 cup coconut milk
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground nutmeg
- 1 1/2 teaspoons ground cinnamon
- 2/3 cup flaked coconut
- 1 cup toasted walnuts, chopped
Fresh Vegan Moxarella Cheese

Blend all ingredients together in a high speed blender until completely smooth, about 1 minute
- 1/4 C. raw cashews (soaked in water for several hours and then drained IF you don’t have a high powered blender)
- 1 C. hot water
- 2 T. + 1 t. tapioca starch
- 1 T. extra virgin olive oil (optional)
- 1 small garlic clove, minced
- 3/4 t. sea salt
- 1 t. fresh lemon juice
Green Bean Casserole Mash-Up

Preheat the oven to 375 degrees F
- 1 tablespoon butter, for greasing pan
- 2 cloves garlic, smashed
- Salt
- 2 Yukon gold potatoes, peeled and cut into 1-inch chunks, peels reserved
- 1 pound fresh green beans, trimmed and cut into thin strips on an angle
- 2 tablespoons olive oil
- 1/2 cup chopped Vidalia onion
- 1/2 serrano chile, seeded and chopped
- 8 to 10 sprigs fresh thyme
- Freshly ground black pepper
- 1/2 teaspoon Hungarian paprika
- 1 pound baby bella mushrooms, sliced
- 1 tablespoon Worcestershire sauce
- 1 cup heavy cream, at room temperature
- 1/2 cup Mexican crema or sour cream
- 8 pickled jalapeno slices, finely chopped
- 6 ounces white Cheddar, shredded
- Reserved potato peels, cut into thin strips and soaked in water at least 20 minutes
- 6 fresh sage leaves, finely chopped
- 6 sprigs fresh thyme, leaves stripped and gently chopped
- Pinch Hungarian paprika
- 2 teaspoons olive oil
- Salt and freshly ground black pepper

- Cheesecake:
- 8 oz (250 g) vegan cream cheese, such as Tofutti
- 1/2 cup (125 mL) granulated sugar
- 2 tbsp (30 mL) all-purpose flour
- Substitute for 1 egg
- 2 tbsp (30 mL) grated orange zest, (2 to 3 oranges)
- 1/3 cup (75 mL) orange juice
- 1 tsp (5 mL) vanilla extract
- Brownie Batter:
- 1 cup (250 mg) soy milk
- 3/4 cup (175 mL) margarine, cut into cubes
- 1 2/3 cup (400 mL) granulated sugar
- 1 cup (250 mL) unsweetened cocoa powder
- Substitute for 2 eggs
- 1/4 cup (60) orange juice
- 2 tsp (10 mL) vanilla extract
- 1 3/4 cup (425 mL) all-purpose flour
- 1/2 tsp (2 mL) salt

- 1 egg, lightly beaten
- 1/4 cup plain yogurt
- 1 cup packed finely grated carrots
- Cream Cheese Filling:
- 1 (4 ounce) package cream cheese, softened
- 1/4 cup white sugar
- 3 tablespoons all-purpose flour
- 1 tablespoon bourbon whiskey
- 1 teaspoon grated orange zest
Creamy Coconut Garlic Mushrooms

- 16 oz of Mushrooms (2 of those little boxes or 1 of the bigger guys)
- 4 Cloves of Garlic
- 1 Tablespoon of Coconut Oil
- 1/3 Cup Coconut Milk + more as needed (shake can before measuring)
- 1/2 teaspoon Dried Thyme
- 1/2 teaspoon Dried Oregano
- Salt and Pepper to Taste
