Mushroom Parmentier

Directions Mushrooms Clean and quarter the mushrooms

- 2 pounds mushrooms
- 3 tablespoons butter
- 2 tablespoons olive oil, more as needed
- 1 large red onion, chopped

- A handful of chopped fresh thyme leaves
- 1/2 cup red wine
- 1/2 cup vegetable stock or water

- 6 medium floury potatoes, such as Yukon gold
- 2 to 4 tablespoons butter
- 1/4 cup milk

- 4 ounces Comté or gruyere cheese, cut into very fine dice
- 2 tablespoons Parmesan cheese

- 1 . 1 1/2 cups orzo

Strawberry Yogurt Smoothie

Rinse and drain the strawberries and place them in a food processor or blender

- 1 * 1 can of evaporated milk 357mL (or 1.5 cups cream)

- 1 * 1 tablespoon minced fresh thyme leaves (or dried, or basil or oregano)
- * sprinkle or two of salt
- 8 * 8 ounces or so of grated Fontina cheese
- 8 * 8 ounces or so of grated Grana Padano Parmesan cheese
