Polipo alla Triestina (made with braised octopus)

- 1 1/2 lbs. braised octopus
- Salt & pepper to taste
- 6 tbs. spoons olive oil
- 12 Ruby potatoes skin on (boiled, slightly cooled and cut in half)
- 3 tbs. red wine vinegar
- 1 red onion, thinly sliced
- 4 cups small colorful tomatoes (cherry/grape/heirloom)
- 1 bunch chives or scallions
- 1 lemon
- 2 heavy bottomed skillet or saute pan, 12 inch in diameter with covers
Grilled Skirt Steak Tacos with Roasted Poblano Rajas (Tacos De Arrachera Al Carbon Con Rajas)

For grilled beef tacos, skirt steak is a great choice
- 2 medium white onions, sliced into 1/2-inch rounds (keep the rounds intact for easy grilling)
- 3 garlic cloves, peeled and roughly chopped
- 3 tablespoons fresh lime juice
- 1/4 teaspoon cumin, preferably freshly ground
- Salt
- 1 pound skirt steak, trimmed of surface fat as well as the thin white membrane called silver skin"
- 3 medium (about 9 ounces total) fresh poblano chiles
- Vegetable or olive oil for brushing or spritzing the onions and meat
- A small bowlful of lime wedges for serving
- 12 fresh, warm corn tortillas

- 1 kg (2.2 pounds) potatoes, a mix of waxy and baking potatoes (if you prefer to use only one type, pick waxy potatoes, not too firm)
