  • 6 tbs. spoons olive oil
  • 12 Ruby potatoes skin on (boiled, slightly cooled and cut in half)
  • 3 tbs. red wine vinegar
  • 1 red onion, thinly sliced
  • 4 cups small colorful tomatoes (cherry/grape/heirloom)
  • 1 bunch chives or scallions
  • 1 lemon
  • 2 heavy bottomed skillet or saute pan, 12 inch in diameter with covers

For grilled beef tacos, skirt steak is a great choice

  • 2 medium white onions, sliced into 1/2-inch rounds (keep the rounds intact for easy grilling)
  • 3 garlic cloves, peeled and roughly chopped
  • 3 tablespoons fresh lime juice
  • 1/4 teaspoon cumin, preferably freshly ground
  • Salt
  • 1 pound skirt steak, trimmed of surface fat as well as the thin white membrane called silver skin"
  • 3 medium (about 9 ounces total) fresh poblano chiles
  • Vegetable or olive oil for brushing or spritzing the onions and meat
  • A small bowlful of lime wedges for serving
  • 12 fresh, warm corn tortillas
