String Beans and Corn Casserole

Mix all ingredients and put in a greased casserole
- 1 can string beans
- 2 cans white whole kernel corn
- 1 can cream of celery soup
- 1 onion chopped
- 1/2 cup celery chopped
- 1 cup sour cream
- 1 tube Ritz crackers
- 1 bell pepper chopped
- 1 stick butter
Stuffed Bell Pepper

To parboil peppers: Cut tops of peppers (save tops) and remove seeds and clean peppers
- 20 large green bell peppers parboiled
- 2 pounds ground beef
- 2 pounds pork sausage "Tennessee Pride"
- 3 medium onions chopped
- 1 1/2 cups bell pepper chopped
- 2 cups rice cooked
- 2 pounds boiled shrimp peeled and chopped
- bread crumbs
Sugared Popcorn

Cook sugar and water to thick syrup
- 2 cups popcorn popped
- 1 cup sugar
- 1/4 cup water
Sweet Peas

Start by making golden brown roux using 1 tablespoon of flour for each can of sweet peas

- 1 medium onion finely chopped
- 1 package pickled meat cut into pieces
- 4 cans sweet peas drain and save water
Sweet Potato Casserole 1

Peel and cut sweet potatoes into 1 to 2 inch pieces
- 5 medium sweet potatoes peeled and cubed
- 2 cups sugar
- 2 tablespoons vanilla extract
- 2 tablespoons butter
- large marshmallows
Sweet Potato Casserole 2

Boil and mash potatoes. Mix in sugar, butter, eggs, vanilla, and milk
- 3 cups sweet potatoes
- 1/2 cup sugar
- 1/2 cup butter
- 2 eggs beaten
- 1 teaspoon vanilla extract
- 1/3 cup milk
- 1/3 cup melted butter
- 1 cup light brown sugar
- 1/2 cup flour
- 1 cup pecans chopped
Sweet Potato Pie

Combine sweet potatoes, eggs, evaporated milk, butter, condensed milk, and sugar
- 4 cups sweet potatoes cooked and mashed
- 5 eggs
- 1 can evaporated milk
- 1 stick butter
- 1 can condensed milk
- 1/2 cup sugar
- 2 teaspoons vanilla extract
- 3 pie crust (9 inch) uncooked
Sweet Potatoes

Mash potatoes and blend with spices
- 3 cups cooked sweet potatoes (5 to 7) or 1 - 30 oz can
- 1/2 stick butter
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- dash cinnamon
- 1/3 cup butter
- 1 cup brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
Taco Dip

Mix bean dip, guacamole dip, and sour cream
- 4 cans Frito Lay Bean Dip
- 3 container guacamole dip
- 1 container sour cream
- lettuce shredded
- tomatoes diced
- 2 bags Monterey jack & Colby cheese
Taco Soup

Simmer all ingredients together
- 1 pound ground beef or turkey browned and drained
- 3 (16 oz) cans stewed tomatoes or Rotel
- 1 can corn drained
- 1 can chili or kidney beans drained
- 1 package taco seasoning mix
- 1 package Hidden Valley Ranch dressing mix
