- 2 lbs. Ground Beef
- 2 tsp. Salt
- 1/2 tsp. Pepper
- 1 minced Garlic Clove
- 1/2 c. Onion
- 2 c. Water
- 32 oz. Tomato Sauce (4- 8oz)
- 4 tsp. Wostershire Sauce
- Oregano
- Parsley
- Spaghetti
- Parmesan Cheese
Taco Dip

Mix Cottage Cheese and Cream Cheese together
- 1/4 c. Cottage Cheese
- 1 8-oz. pkg. Cream Cheese
- 1 bottle Taco Sauce
- 1/2 c. Chopped Tomato
- 1 c. Finely Chopped Lettuce
- 1 c. Shredded Cheddar Cheese
Buffalo Chicken Meatballs

Preheat Oven to 400ᵒ In a large mixing bowl, combine the ground chicken, onion, garlic, and parsley
- 1 lb. ground chicken or turkey
- Extra Virgin Olive Oil
- 1/2 small onion, grated
- 2 T. Butter
- 2 cloves garlic
- 1/2 c. Hot Sauce (Frank’s)
- 1/2 c. Parsley, chopped
- 3 Scallions
- Salt & Pepper
Tortilla Roll-Up Appetizer

Mix ingredients and spread on Tortilla Shells
- 8-oz. Cream Cheese
- 1 c. shredded Cheddar Cheese
- 8-oz. Sour Cream
- Green Onions chopped
- 4-oz. Green Chillies
- Flour Tortilla Shells
- 4-oz. chopped Black Olives
Emeril's Spaghetti and Meatballs

Heat the bacon drippings (or olive oil) in a Dutch oven over medium-high heat
- 1 T. bacon drippings or olive oil
- 1 c. diced onions
- 1 1/2 tsp. chopped garlic
- 1/4 tsp. crushed red pepper flakes
- 1 (28-ounce) can crushed tomatoes
- 2 (15-ounce) cans tomato sauce
- 1/2 (6-ounce) can tomato paste
- 1/2 tsp. dried basil leaves
- 1/4 tsp. dried oregano leaves
- Salt and freshly ground black pepper
- 12 ounces ground chuck
- 8 ounces ground pork sausage
- 2 T red wine
- 1 large egg, lightly beaten
- 1/2 c. minced green onions, white parts only
- 1 tsp. minced garlic
- 2 T chopped fresh parsley leaves
- 3 T grated Parmesan
- 1/2 tsp kosher salt
- 1/4 tsp. freshly ground black pepper
- 1 tsp. Essence
- 1 pound spaghetti, cooked, drained and tossed with olive oil
Emeril's Essence Creole Seasoning

- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
Ranch Pretzels

- 1 1/2 lb. ripe Tomatoes
- 1/4 c. Water (if necessary)
- 2-3 Jalapenos
- 1/3 c. Cilantro
- 1/2 small White Onion (1/4” thick)
- salt to taste
- 4 Garlic Cloves
- 1 1/2 tsp. Cider Vinegar
