Oatmeal Bars/ Erin Kidwell

The Pursuit of Healthiness
- 3 cups of oats (steel cut is best but whatever you have works!)
- 1/4 cup of cocoa powder, 1/8 cup of organic sugar
- 2 teaspoons baking powder
- a little bit of salt, very little, I used about 1 tsp
- 1 organic egg & 2 egg organic whites
- 1 1/4 cups skim milk
- 3/4 c mashed bananas (optional) I didn't add!
- 1 teaspoon vanilla extract
- 3/4 c semi-sweet chocolate chips (optional, I put about a handful in)
Fettuccini Alfredo/Key Ingredients

1. Cook fettuccine according to package directions; drain
- 12 ounces fettuccine
- 1/2 (1 stick) butter
- 2 cups (1 pint) heavy cream
- 1/2 teaspoon black pepper
- 1-1/2 cups grated Parmesan cheese

Follow directions above!
- Mix:
- 2 1/2 lbs red potatoes or 8 russet potatoes.
- Boil them whole until soft (Red) and cut into quarter size for (Russet). Cut into quarters or a little smaller (Red) after boiling.
- 1/2 cup ranch dressing
- 1/2 cup sour cream
- 1/4 cup bacon bits
- 1 cup cheddar cheese
- Pour over potatoes
- Top with:
- Cheddar Onions
- Can put on immediately or last 10 mins.
- Bake at 350 degrees for 35-40 mins. in a glass baking dish.
- Optional:
- Can use twice the mixture for more topping.
- Can use corn flakes on top instead of Cheddar Onions.
Turkey

Buy frozen turkey 8-9 days before the day
- degrees:
- 8-10 lb Turkey- 2 hrs
- 12-16 lb Turkey- 2 1/2 hrs
- 16-19 lb Turkey- 3 hrs
- 20 Lb Turkey - 3 1/4 hrs
- 21-24 lb Turkey- 3 1/2 hrs
- (20 mins per lb. at 325 degrees)
- Done:
- Cut between thigh, juices run clear
- Shake leg, feels loose.
- Meat Therm. reads 180 degrees in the inner thigh.
Tacos/ Vick's

Prepare Hot Roll Mix as directed on box , minus the yeast
- 1 box Hot Roll Mix
- 2 lbs. Hamburger (browned and drained)
- 1 Potato
- Minced Onion
- 2/3 pkg Taco Seasoning
- 8-12 oz Shreaded Cheddar Cheese
- Chopped Lettuce
- Taco Sauce

- Ingredients:
- 1 (15 ounce) can whole kernel corn, drained
- 3 (14.5 ounce) cans chicken broth
- 1 (10 ounce) can chunk chicken (I use Rotisserie chicken)
- 1 (15 ounce) can black beans, drained
- 1 (10 ounce) can diced tomatoes with green chile peppers, drained
- A little garlic
- a few Chopped Green Onions
- Top with:
- Mission Tortilla Strips, Cheddar, Chopped Green Onion and Sour Cream
Round Steak, Potatoes & Gravy

An instant pot makes quick work of this meal featuring round steak with potatoes and gravy
- 1 1/2 pounds round steak
- 1 large can cream of chicken soup
- 1 package onion soup mix
- 1 3/4 cups water
- 5 to 6 large potatoes
- Carrots, chopped
- Salt and pepper, to taste
- 2 tablespoons olive oil

- 3-4 lb Roast (Chuck Arm Roast)
- 1 Pack Onion Soup
- 1 1/2 Cups Water
- Sliced Carrots
- 5-6 Potatoes (sliced)
Veg & Cracker Dip/ Nancy Bowman's

- 3 tsp Minced Onion

Cake: Sift flour, baking powder and salt together (I use a whisk to do this!)
- Sponge Cake Roll:
- 3/4 cup flour
- 1 t. baking powder
- 1/4 t. salt
- 4 eggs, separated
- 1 t. vanilla
- 3/4 cup sugar, divided
