- For the Pork:
- 2 whole ancho chilies, seeds and stems removed
- 2 whole pasilla or guajillo chilies, seeds and stems removed
- 1/2 cup homemade or store-bought low-sodium chicken stock
- 2 teaspoons vegetable oil
- 1 teaspoon dried Mexican oregano
- 1 teaspoon dried ground cumin seed
- 1 tablespoon achiote powder or paste
- 1 chipotle chili packed in adobo sauce, plus 2 teaspoons sauce from can
- 1/4 cup distilled white vinegar
- 3 whole cloves garlic
- 2 1/2 teaspoons kosher salt

- 2 pounds boneless blade-end loin or sirloin pork roast

Bacon Lover's Mac and Cheese

Preheat the oven to 400˚ F
- 12 oz. pasta shapes
- 5-6 oz. bacon, chopped
- 8 oz. baby bella mushrooms, sliced
- 2 tbsp. unsalted butter
- 1/4 cup flour
- 2 cloves garlic, minced
- 2 1/2 cups milk (low fat or whole milk)
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- Freshly ground black pepper, to taste
- Pinch cayenne pepper
- 4 oz. Fontina cheese, grated
- 4 oz. white cheddar cheese, grated
- 3 cups fresh baby spinach leaves, chopped
Cranberry Liqueur

- 2 cups granulated sugar
- 2 cups fresh cranberries
- 3 Tablespoons fresh squeezed orange juice
- 1 tablespoon grated orange rind
- 2 cups vodka (Use decent vodka for the best results)

1. Heat oven to 500°. Put an 18" x 13" x 1" rimmed baking sheet into oven for 10 minutes
