Mango-Chile Ice Pops (Paletas de Mango con Chile)

1. Heat mango juice, sugar, lemon juice, and 1⁄2 cup water in a 1-qt

- Fish
- Use a fresh meaty type of fish such as rockling or barramundi if available
- Measurement – 1 large fish fillet = 2 people OR 250g per person
- Fish Marinade
- 1/4 cup olive oil
- 2 Tbl white wine vinegar
- 2 Tbl fresh lime juice
- 1/2 tsp cumin
- Zest of 2 limes
- 1 1/2 tsp honey
- 2 cloves minced garlic
- 1 fresh red chilli chopped
- 1 pinch black pepper
- Chipotle Lime Dressing
- 1 cup light sour cream
- 1/4 cup adobo sauce (from chipotle peppers)
- 2 Tbl fresh lime juice
- Zest of 2 limes
- 1/4 tsp cumin
- 1/4 tsp chilli powder
- BBQ Corn
- 1 corn cob
- Butter for coating
- 1/2 tsp cumin
- 1/2 tsp dried corriander (cilantro)
- Topping
- Corn tortillas
- 1/4 sliced red cabbage
- Fresh corriander (cilantro)
Shrimp Creole

This recipe was based and inspired by Emeril’s Shrimp Creole
- 400 gm or just over 3/4 lb. cooked shrimp
- 1 medium bell pepper, finely chopped
- 1 medium onion, finely chopped
- 1 large celery stalk, finely chopped
- 3 garlic cloves, minced
- 2 tbs extra virgin olive oil
- 1 can stewed tomatoes, chopped
- salt to taste
- ground black pepper to taste
- 1-2 tsp cayenne, adjust to taste
- 1 tbsp Emiril’s Creole Seasoning, I made my own from his recipe
- 1 cup fish stock or vegetable stock, I used low sodium vegetable
- 2 tbsp flour
Sprouts with walnuts & bacon

Steam the sprouts until tender but still bright green, about 5 minutes
- 750 g Brussels sprouts , trimmed
- 70 g bacon lardons or cubetti de pancetta
- butter
- 25 g/1oz walnut halves, roughly chopped
Duck Confit/Confit de Canard

Add the ingredients for the green salt in a small food processor or spice grinder
- 4 whole duck legs (I used 2 duck legs and 2 breasts)
- Enough fat to cover the legs, 4+ cups
- Green salt
- 4 Tbsp kosher salt
- 1 bay leaf
- 1 Tbsp thyme leaves
- 2 Tbsp packed parsley leaves
- 1/2 tsp black peppercorns
Leek Terrine with Goat Cheese

1. Bring a large pot of salted water to a boil
- 20 medium leeks (about 5 lbs.)
- 4 oz. goat cheese, softened
- 4 oz. crème fraiche
- 1 tsp. lemon zest
- Kosher salt and freshly ground black pepper, to taste
Pollo a la Brasa and Aji Verde Sauce

1. Whisk together soy sauce, lime juice, garlic, cumin, paprika, oregano, pepper, and oil
- Aji Verde Sauce:
- 1/3 cup soy sauce
- 2 tablespoons fresh lime juice
- 5 garlic cloves, finely grated
- 2 teaspoons ground cumin
- 1 teaspoon paprika*
- 1/2 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1 tablespoon oil
- 3 1/2 lb whole chicken or quartered
- 1 bunch of cilantro
- 1-2 green onions, optional
- 2- 3 fresh jalapenos, or to taste(in a pinch, you can also use pickled)
- 1/2 -1 clove of garlic, or to taste
- 2-3 oz cotija cheese*
Pepinos encurtidos (ah-jaht)

- 1 tsp sal

Creamy Potato and Leek Soup

Add potatoes and chicken broth to a large saucepan over medium-high heat
- 8 potatoes, peeled and cubed
- 4 cups fat-free, reduced-sodium chicken broth
- 1 pound bacon, cut into 1-inch pieces
- 2 large leeks, sliced
- 1 cup 1% milk
- 1/2 teaspoon ground white pepper
Pork with Mushrooms and Arugula Recipe

- 2 cups arugula
- 1 tablespoon olive oil

- 3/4 cup chicken broth
- 1/2 teaspoon salt, or to taste
