SNACKS - Cheese Straws

1. Preheat oven to 350°F
- 1 1/2 cups (about 6 ounces) grated extra-sharp Cheddar cheese
- 4 tablespoons (1/2 stick or 2 ounces) unsalted butter, softened and cut into 4 pieces
- 3/4 cup flour, plus more for dusting
- 1/2 teaspoon kosher salt
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon half-and-half (I used cream, because I had it on hand; suspect milk would work just as well)
FROSTING - Easy & Delicious American Buttercream

Cream the butter and salt until creamy (but NOT melty)
- 4 oz. (about a stick) of unsalted butter
- 2 cups powdered sugar, sifted
- 1/2 teaspoon kosher salt
- 1 tablespoon whole milk
- 2 teaspoons vanilla extract (use the good stuff- you can totally tell with this recipe!)
SNACKS - Pickled Papaya

1. Boil vinegar and sugar
- 1 kg firm papaya (clean weight w/o skin and seeds)
- 2 Tbsp salt
- 300 gm rice wine vinegar (if sub with imitation vinegar[cuka buatan], use 70-80% artificial vinegar 20-30% water)
- 300 gm sugar
- 10 bird's eye chilli
PORK - King Ribs

Marinate pork in the marinade for at least an hour
- Ingredients:
- 350 g Pork Ribs or Pork Chops
- Marinade:
- 1 egg
- 2 tablespoon Oyster Sauce
- 1/4 teaspoon Salt
- 1/2 teaspoon Sugar
- 1/2 teaspoon Baking Powder
- 1 tablespoon Corn Flour
- Sauce:
- 1 1/2 tablespoon A1 Steak Sauce
- 1 1/2 tablespoon HP Sauce
- 1/2 tablespoon Worcestershire Sauce
- 1 1/2 tablespoon Sugar
- 5 tablespoon Water
- 1 tablespoon Corn Flour
COOKIES - Green Tea White Chocolate Cookies

Preheat an oven to 180C. Line baking sheet with baking paper or silpat
- 130 g ........................................ All purpose flour
- 1 tsp ......................................... Baking powder
- 1 tbsp ........................................ Green tea powder
- 1/4 tsp ....................................... Salt
- 80 g ........................................... Granulated sugar
- 80 g .......................................... Shortening (non-hydrogenated shortening)
- 1 ............................................... Egg
- 1 tbsp ....................................... Milk
- 1/4 tsp ...................................... Vanilla extract
- 1/8 tsp ...................................... Almond extract (optional)
- 35 g .......................................... White chocolate (chopped if large)
CAKE - White Chocoalte Cake with White Chocolate Butter Cream Frosting

CAKE: 1 Grease and flour 8 or 9 inch pan
- CAKE:
- 1 1/4 cups / 160g Cake flour
- 1 1/2 tsp baking powder
- Pinch of salt
- 1/4 cup heavy cream
- 1/4 cup sour cream
- 3 oz / 85g white chocolate
- 1/2 cup/ 115g unsalted butter, at room temperature
- 3/4 cup/ 150g sugar
- 1/2 tsp vanilla extract
- 2 large eggs, separated
- WHITE CHOCOLATE BUTTERCREAM FROSTING:
- 6 oz / 170g white chocolate, chopped
- 4 tbsp heavy cream
- 1 cup/ 225g unsalted butter, at room temperature
- 3/4 cup/ 150g powdered sugar
- 1/2 tsp vanilla extract
- A dash of salt
FISH - Grilled Fish with Chilli and Turmeric

1. Blend all the ingredients of the chilli paste in a food processor until fine
- For the chilli paste:
- 2 tablespoons oil
- 500 g fish fillet
- 1 lime, for squeezing over
- 1 clove garlic
- 3 shallots
- 6 dried chillies
- 1/2 teaspoon turmeric powder
- 1 teaspoon fish sauce
- 1 teaspoon or to taste, sugar
- To taste, salt
CHICKEN - Baked Soy Sauce Wings

- 2 cups All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1 cup Buttermilk
- FOR FROSTING:
- 2 packages (8 Oz) Cream Cheese
- 1 stick Butter
- 2 teaspoons Vanilla
- 1 package 2 Lb Powdered Sugar
- 1 cup Chopped Walnuts
- 1 cup Sweetened, Flaked Coconut
SOUP - Chilli Chicken Soup

1. Rub chicken pieces with cumin, coriander and oregano
- 6 free-range chicken legs
- 2 cloves garlic
- 1/2 tsp each of ground cumin, coriander, oregano
- 2 rashers bacon, finely chopped
- 1 red onion, finely diced
- 2 sticks celery, finely chopped
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1/2 cup dry white wine
- 4 cups chicken stock – try this recipe here from Susie
- 1 cup water
- 600 g pumpkin, cubed
- 1 tsp juniper berries
- Zest and juice of one lime
- Cracked black pepper
- 250 g cherry tomatoes, halved
- 5 stalks spring onions, finely sliced
- 1 each green, red, and yellow fresh long chillies, very finely sliced
- 1 bunch fresh coriander, chopped
